Christmas Rice (Arroz Arabe) | Eating with Andy

  • It’s almost Christmas and I thought it would be the perfect time to make a classic side dish that is always present on our Christmas table as it’s a great accompaniment to Turkey, Ham or any meat. Cooking the rice in Coca Cola gives it the colour and a hint of sweetness. The sugar in the cola is very subtle in the end result and is delicious together with the crunchy angel hair pasta, sweet sultanas and nutty pecans through it. You won’t believe how easy it is to make!
    INGREDIENTS (serves 8)
    100 g angel hair pasta, broken into pieces around 5cm length
    2 cups white long grain rice, washed
    100 g sultanas, hydrated in boiling water for 5 minutes
    2 tbsp oil
    2 garlic cloves, crushed
    100 g toasted pecans or almonds, chopped
    2 ½ cups dark cola
    1 tbsp butter
    salt, to taste
    METHOD
    1) Heat oil in a medium sized saucepan over medium-low heat. Saute the garlic for one minute stirring so it doesn’t burn. Add the washed rice and let it cook for a couple of minutes. Once the grains are coated stir in the salt and raisins.
    2) Add the Cola and bring to a boil. Put the lid on, lower the heat to the minimum and cook for 20 to 25 minutes, until the rice is tender.
    3) In the meantime, toast the angel hair pasta on medium low with some oil stirring as they tend to burn quite easily. Reserve. Toast and roughly chop the pecans.
    4) Once the rice is cooked, add butter and fluff it up with a fork now before it cools down so the grains don’t stick together.
    5) To serve, place noodles on a serving platter and add the hot rice. Top with pecans. Let it sit for 5 minutes so the heat from the rice softens the noodles a bit. Give it a mix and top with more pecans and a rosemary sprig.
    TIPS
    - You can reheat the rice in the microwave, the noodles will still remain a bit crunchy
