    Add 3 to 4 medium sized beets, 1 tbsp crushed mustard seeds, 1 tbsp rock salt, 1 litre water to a big jar. Juliene the beets and cover with lid or thin cheese cloth. Keep it on the window sil. Keep fr 5 to 6 days. Every 3rd day stir with a wooden spoon. Eat the beets like a pickle and have a glass everyday.

    Yes on the veggie digestion! I eat a huge mixing bowl of salad most days, including plenty of shredded cabbage, kale, and other hard crunchy veggies. I started adding about 1/2 cup of organic yogurt in as part of the 'dressing'. I also add a little good olive oil, turmeric and black pepper, oregano, red onion and parsley.

I belong to West Bengal and as far as I can remember during my childhood, the housemaids used to eat the water rice (Bengali name Panta Bhat) but we never thought of the amazing benefits of the same.     We call this kanji. It's a traditional Punjabi drink in winter made with water, black carrots, mustard seeds, salt & red chili powder. Can be made with the normal carrots and some beetroot as well.

    This is Punjab's kanji! Which is made with black carrots instead of beets. However black carrots have a very short season so beets are a great substitute. Thank you...superb!

      Super EZ...just don't use up the last of your yogurt. Keep about 1/2 cup in the carton. Add about 1-1.5 cups milk. Leave out on counter overnight, or 24 hrs. If it's 80F in your kitchen it works. In colder weather, place in gas oven and let the pilot light keep it warm, or in laundry room on shelf above dryer.

    Yes!! I know this is called ' Kanji ' we used to have a lot in our childhood. My grandmother used to make it with 'black/deep maroon carrots' just like beetroots.thanks for reminding!

    I have heard of somebody having this kanji & that person had stomach cancer got reversed though that person didn't know the goodness , it was just that she felt like having it & the Doc was also surprised to know. We too didn't know it's a probiotic drink THANKS FOR such an IMP. INFORMATION 🙏🏻

    It's very tasty & tangy we like to prepare it regularly it's very easy and simple to prepare, we also add little bit hot pepper powder, the colour and taste is after 4th or 5th day is awesome, later we filter it and fill in a bottle keep in refrigerator to use atleast for one to two weeks, it ia a very good appetizer, wonderful drink in Indian kitchen.

    Always avoid drinking any probiotic in raining time and only 2-3 times in week. Not more than that's what told us by our parents. Also kambucha is very similar drink to rota in India until early 70's I don't know why it's completely disappeared from India.

    You should try it. Makes sense, the sugar from beetroot attracts the local bacteria around the home. The salt will reduce fermentation slowly.
    Mustard speeds up metabolism, aids digestion, decreased arthritis, lowers blood sugar, inhibits cancer cell growth, and soothes bronchitis pneumonia

      Why add salt when what you want is fermentation to take place and salt only slows it down. My effort was salty even after 5 days. Did not ferment, instead began to get a white film on top :(

    1 liter water, 3-4-carrots diced julien, 1 Tbsp salt, 1 Tbsp black mustard seeds crushed, cover with a cheese cloth and keep on window seal for shade & sun for 5-6 days, every other day , use a wooden spoon and stir it. Use the left over carrots for an Indian Carrot Pickle recipe!

      @@godloves9163 it's July 17th 2021 it is currently 8:00 p.m. . I am currently drinking the first batch and I haven't really noticed any health benefits thus far. I am drinking about a half a cup in the morning on an empty stomach and a half a cup in the evening before I go to bed. So I know this is not going to happen overnight. But I'm in the process of making a second batch and we'll see what happens. Also I'm actually making the rice probiotic and I finally found the right rice to work with it's a sticky rice and it's actually very good and it makes an excellent probiotic medium so I will give you the recipe on that later when I perfect it. I'll report at a later date thank you for following.
      I'm happy to know that I have a following of the One soul "God Loves" ... boy am I blessed!

      @@godloves9163 okay I'm back for a full report ... it is August 3 2021 I've tried preparing the beat, crushed mustard seed and salt probiotic in two ways one using raw beets and two using steamed or cooked beets and I'm sorry to say that it didn't turn out the way I thought it should have. I was expecting a kombucha like fermentation experience. In this case the beet juice was undrinkable the beets were unedible. On both counts.
      I later learned that the best way to make a probiotic beat juice is to start off with steaming the beats and then spinning them in a blender to make a full juice then add a little yeast starter which you can buy at Sprouts Market or any Whole Foods Supermarket, and let that juice sit for six days on a window seal or in a warm spot at the end of the 6th day you will have a nutritious probiotic beet juice.
      The best way to prepare the rice probiotic is to put the rice in a jar add cinnamon to it and pour either almond milk or macadamian milk or turmeric golden milk. Let it sit for 2 days and then eat it on an empty stomach and there you have it. Enjoy!

    Eat fermented rice weekly just 3 days in little amount to say a cup.
    Because excess of fermented probiotic rice will cause excess good bacterial boom and cause bloating.
    Because rice when fermented overnight have the heaviest concentration of probiotic as the white rice have fibre free, starchy, and simple carbohydrate structure with B-Vitamins, iron and calcium to support the probiotic growth.
    In India, it's used to be a regular diet but nowadays only practiced for health purpose.

    I was diagnosed with hoshimotos a few years back. I believe I showed signs as early as 6 years old ( I'm 34 now). Over the past few years the effects had become completely debilitating and was on a downward spiral. It had gotten to a point that just eating or drinking anything caused extreme pain, I had severe migrains almost daily, and I could not regulate my blood sugar. With covid, I started producing some of y own food to secure my food supply. As of 6 months ago I started looking into fermenting produce. Around the same time I found out that probiotics could lessen if not reverse the effects of my auto immune disease. I started with fermented veggies, fruit based sodas, salad dressings, BBQ sauce, and yogurt. I still haven't gotten cheese making down yet. Introducing these into my diet improved things over time. Then I learned about komboocha and how to make it including the scoby from scratch. I learned about the probiotics diversity found in komboocha. Once I got the process of making it down, I started consuming it in double if not triple the reccomened dosage to start. Once that showed signs of no longer being benificial I did cut back to 1 sixteen oz bottle a day. I do still throw in other probiotics foods as well. My health has greatly improved as a result. I don't live on a 100% non processed food diet because I can't afford too. And I know probiotics if done in excess is not good. However, I have been experimenting with how to do this in the best way for my body and health. My system is based on my observations of my bodies needs through trial and error. It might not work for someone else. I am essentially my own lab rat. But my experimentation is exciting, and keeps me occupied while self quarentining from covid. Keeping myself busy is keeping me sane.

    Hello! Very informative! Do u have any suggestion have to preserve the probiotics in winter months with no sunlight? I have all those ingredients in my kitchen I like to try it because it's very costly to but probiotics and I preferred not use dairy. Thanks!

    This is great content. I’m in Seattle USA and when I tried similar version with carrots it gets whiteish fungus on the top and it take really long time to get that sour taste. We don’t get lot of Sun ☀️☹️
    I tried couple of other which worked for me. Tepache which is pineapple skin soaked into brown sugar water with cinnamon and cloves.
    Cabbage sauerkraut at home - almost similar ingredients as you told.
    I think what you described is call Kanji in Indian state of Rajathan.

      Yes that’s how we know it too Kanji. You can try again put carrots in hot water and then put them in jar it has to be glass jar, then a lot of sea salt or kala namak and then crushed mustard seeds. And then add more water and few beets as well. If you go to Trader Joe’s , Whole Foods or Wegmans you will be able to find red or black carrots there.
      Try doing hot summer days. Even without sun it should be ready. Good luck.
