    I'm going to try this for my Spanish husband, but will add the frozen peas at the end. They don't really need to cook, just unthaw.

    I made this a few days ago and doubled the recipe. The first time we ate it, it was very good, but letting it sit in the fridge a day or two made such a difference in the flavors! It was so much yummier after a few days. I used the saffron Alberto recommends and the Spanish paprika also made a difference. This one's a keeper!

    Making the perfect rice side dish will make the main course all the better and should enhance the flavors. this one is great as a stand along vegetarian dish or just add pollo or carne to make it a main dish

    Que rico! I shall remortgage the house, buy some saffron and give this a try. I cook risotto in a pressure cooker, and guess this could also be cooked in a pressure cooker (10 minutes at high (15psi) pressure). Thank you for making me salivate, and for reminding me of the joy of Spanish food.

    Looks wonderful. I will make it. Thank you. I do think, though, that I would add peas and garbanzo beans after rice is cooked - warm them through. Beans and peas don’t need to be boiled for amount of time rice does.

      Yes, but by adding them when I did, it flavored the garbazons and the peas with all the flavors and made them super tender :) much love!

    Loved the recipe. I adore Spanish food but as I have increasingly moved towards a Vegetarian diet I have found it hard to find spicy/tasty food to prepare. I think this one certainly ticks all the boxes and will certainly give it a go.

    One of the (many) good things about your videos sir is that I can watch them over and over again and not get too much of them - which I probably would if I ate all your recipes as I could not stop eating!
    I have never used saffron before or any other spices very much at all and I wonder what the taste is like? I thought saffron was just for colour and I apologise for my ignorance! Blessings and peace sir.

      Saffron truly gives the most amazing flavor ever, it has a subtly earthy & grassy flavor & aroma, yet sweet, similar to floral & honey, totally worth trying! much love :)

      @@SpainonaFork I could not sleep last night and so at about 4am I decided to go and do a bit of cooking! I cooked equal amounts (3 ounces each according to my measuring jug but not sure if they are meant to be dry or fluid ounces as I am stupid!)of brown rice and green lentils together. At the same time - separately - I cooked 3 finely chopped onions, a medium sized carrot grated and a large 400gm can of chopped tomatoes with three cloves of minced garlic. Then I added about 100gm of canned tuna in sunflower oil and when everything was the right consistency - for me anyway as I was the only person here to eat! - I combined everything. I am truly sorry if (and I sincerely hope it doesn't) the thought of this concoction offends your sense of taste sir but I actually enjoyed it very much. Anyway please continue to inspire us with your great videos especially for those who cannot sleep!

    I often make something similar to this. It's chickpeas (cici beans) and rice with tomato sauce. My cookbook says it's Italian, or at least Italian-American. I bet if I add saffron and peas to it, it'll be pretty good.

    If I were to cook that dish, I would use a Knorr vegetable stock pot (in Spanish, cacito de caldo de verduras Knorr) for making the stock with, and serve it with some paprika garlic chicken that I season it with a paste made with a Knorr chicken stock cube (in Spanish, pastilla de caldo de pollo Knorr), olive oil, garlic, paprika, thyme and pepper.

      If not, I can serve it with cod but the paste will be made with a fish stock cube by Knorr (in Spanish: pastilla de caldo de pescado Knorr), but the same spices that I said.

      Uncooked basmati is fine but it will cook differently and have a very different texture.

      Cook everything the same and just add brown rice vs white rice :) double check on the rice package instructions for liquid to rice ratios! much love :)

      Please forgive me 3 cups broth seems excessive. Your other recipes are 2 cups.

      If you are cooking a paella in a paella pan it is 2 1/2 cups to 1 cup rice, since this is not a paella, it´s 3 cups broth to 1 cup round rice :) much love
