    Spice Rub:
    1/3 cup lightly packed Demerara sugar
    1 tsp coarse salt
    1/2 tsp red chili flakes
    1/2 tsp black pepper
    1/2 tsp dried parsley
    1/4 tsp chili powder
    1/4 tsp cumin
    14 tsp garlic powder
    Salmon:
    4 5-7 ounce salmon fillets
    1 tbsp canola oil
    Sriracha Mayo:
    1/2 cup mayonnaise
    1-2 tbsp sriracha
    1/2 tbsp sweetened condensed milk
    Instructions:
    1. Mix spice rub in a small bowl.
    2. Pat salmon fillets dry with a paper towel and drizzle with oil. Season lightly with salt. Place an approximate tablespoon of spice rub on each fillet and spread it evenly, pressing the rub into the salmon to adhere. Flip fillets over and repeat.
    3. Keep salmon chilled while you pre-heat your grill to 400°F and mix the spicy mayo.
    4. Whisk together the mayonnaise, sriracha and condensed milk starting with a tablespoon of sriracha and condensed milk. Add more of either to adjust to your liking. Keep chilled until ready to use.
    5. If using a grill, place salmon fillets directly on the grates or use a grill mat. Cook for 6-8 minutes depending on the thickness of your fillets. You'll want an internal temperature of 135°F
    6. If using an air fryer, place salmon fillets into the basket in a single layer without overcrowding. Select the air fry mode, set the temperature to 390°F, and cook for about 7 minutes, again depending on the thickness of your fish.
    Notes:
    -fresh or frozen salmon will work, just be sure to pat dry.
    -don't allow the salmon to sit for more than 30 minutes with the spice rub as it tends to start to weep.
    -using a grill mat makes flipping the salmon easy and ensures little sticking.
    -cook the salmon to your liking, mine is about 135°F but you can cook it as low as 125°F for more medium-rare and up to 145°F for well.
