Why do you lot use haddock, actually? My best chippy was up in Grimsby (yes, cry, Hull), and they told me cod was a bottom feeder. Me, being a posh, London twat, can't tell the difference, but I have been using haddock ever since, and refusing to eat cod. Is there really a difference or are you lot just taking the piss? 😂😂😂

Does it have to be Cod? I'm from India and I am not sure if we get fish like Cod, Haddock or Halibut here...We do get Bhetki (Barramundi/Asian Sea Bass) and the new favourite is Basa (not from Vietnam but raised locally in Eastern India)...

Where I come from soda water is soda pop. Not the soda water here in the vid. Lol. This looks so good. Can I ask you something? It's the first time I ever seen fries blanched first before frying. Will blanching them first help keep them preserved longer in the freezer? Thanks 🤗✌️
Yes. We boiled them and fried them twice. Boiling them would help the moisture escape faster and freezing them dries them even more which gives us that crispness. After first fry, you can freeze them for few months in a sealed bag.

Aerarion in batter can be achieved in different ways. Chemical, mechanical and fermentation. But soda water/baking soda definitely works the best.
