Mexican Breakfast Bowl with the BEST Chorizo Potatoes on the Griddle

This loaded breakfast bowl is made with diced potatoes, sautéed peppers and onions, chorizo, and marinated steak, and topped with over easy eggs for a hearty and delicious griddle breakfast!
Even though it’s called a griddle “breakfast bowl”, this filling griddle recipe would be perfect for dinner, too. And the potatoes and chorizo are awesome by themselves as a side dish. One of the best “bowls” that we’ve made in a while, and a perfect recipe for the griddle!

Looks fantastic! I just made chorizo and eggs in corn tortillas this morning and added hash browns on the flat top, was fantastic! I love the idea of potatoes with chorizo, looks amazing, I will try that next! Homemade pico de gallo is always great on anything!

The food looks fantastic, man. 😋 I’m not a fan of the chorizo in a tube either, but it does make a great seasoning agent for potatoes, etc. I’m not sure if you are aware, but there’s ground pork/beef chorizo you can pick up - it's more meaty, like ground beef. But the bowl looks fantastic yum😋

Great recipe as always, on a side note, I’m currently focused on lowering my carbs and mastering the Jicama as a potato replacement. They make great fries and hash browns with minimal carbs.

This is a really good recipe. I was sure there would be something wrong with the chorizo potatoes, but nope, just the big tube of chorizo and the taters like it should be. Maybe more chorizo to potato ratio. They are great just by themselves for breakfast, my wife makes them every once in a while. Good thing you didn't change it even if the chorizo is not your favorite.

Just had an idea. The next time you use one of your chipotles you have frozen, pour some of your cooking liquid in the bag, so you get all of the good adobe out of the bag.

We use that brand of chorizo but always add a couple of eggs to it so lumps up better...

different question. what do you have in between the grill plate handles and assembly itself. coming from commercial flat tops and being right handed, im used to using that left side wall for lifting my food. i cant do it with my new flatrock because food falls through the handle

Probably a dumb question but I've never heard of ghee so I looked it up and saw it's a healthier fat. First question, what kind of fat is it and where do you get it? I've never seen it in a grocery store but I've never looked for it either.
most my main grocery stores actually have it in the oil isle..this is homemade...its not the healthiest fat...i actually prefer tallow and avocado oil

@TheFlatTopKing I've been hunting one for a while myself, I've bought a few cheap ones from local big box stores, and they are no good. I can hardly get water to boil, much less cook much on them. If you happen to find a better option, please make a video about it! I'm sure a lot of us that like cooking outside would like your honest review/opinion on a good "stove eye" to use outdoors. Thanks!
