    Hoshizaki water pumps has got to be the most expensive pumps out of all the other ice maker manufacturers..

    I ran a KM-1600 Hoshi for 20 years. It was used when I bought it. Last 3 years 1/2 of the evaporator got loose but still made ice with a little adjustment on the water level sensor. Hoshi makes the best cube icemakers!!

      If the evaporator starts to seperate, i can see adjusting the hot gas valve length on the control board to max harvest to prolong ice making.. never heard of adjusting water level sensor….

      Actually I had to make one work when I had a separated evap. It involved using SS clips near the front and back of the separated evaporator then sealed the water distribution tube where I put the clips and raised the float as high as I could and it made decent ice until we could replace the machine..

    This unit wasn’t bad at all. The level of black mold I’ve seen in these units is crazy. I am in the south so it’s farm more humid hear but yeah I expected a black mold clog up on the spray rails from the other comments. There’s a lot we’re not seeing here #1 out of respect for his customers #2 he’s not servicing the really nasty places you guys have no clue what’s in these kitchens!

      I can confirm. Also, if a place has their ice maker outdoors, you probably don't want to eat there.

      I have serviced ice machines where they make bread. The yeast and flower dust really creates the mold fast.

    Thank you for this video, as a district manager with 5 locations that use this brand of ice machine this really helped. Took apart a water pump today and found a piece of the drop tray stuck in the water pump

    My workplace, the one with the failed exhaust hood for the past 13 months, has a Hoshi ice machine that has needed a new Bin Full sensor for 11 years and counting. It's never going to be fixed, we've accepted that fact. Now if I can just convince my fellow crew members to knock the built-up microcubes out of the chute once they've dug a hole the size of a Volkswagen in the ice bin, I'd be one (slightly) happier dude.
    Aside from the Bin Full sensor being bad, and the ice bin door not sealing properly for at least a decade, it's been one helluva workhorse.
    The problem with getting ANYTHING serviced is, as I recently found out, our service guy will only work on things he can classify as "Employee Abuse," since standard repairs are part of the service contract and "abuse" repairs must be paid by the individual store where he gets to make more money. Our espresso machine failed - first the hot water boiler ($600 for part), then two days after the boiler was replaced, the steam boiler failed ($800 for part), and then a few days later the coffee press assembly broke. Both boilers failed due to excessive calcium and lime buildup. (We have well water, a water softener, and six-stage filtration - sediment prefilter, four particulate filters, and a descaling stick - and our water still destroys equipment from the inside.) The press assembly began shooting espresso grounds out the chute reserved for cleaning tablets only, and dumping hot water into the grounds tray, somebody decided to take it apart and ended up breaking the assembly. That part, plus other various idiocies on the part of New Manager, has put us $5,000 over budget. We only have Dawn Power Dissolver to clean the store with right now, and there's only a bottle and a half left. Wait, there's a tiny splash of Comet With Bleach in a spray bottle, about half an inch, but we're saving that for "emergency cleaning."
    Other things that we can't get serviced? Our chemical proportioning systems. The one at our three bay sink does not dispense sanitizer at all (registers less than 0.0 ppm on test strips) and the detergent side of it dispenses too little product - slightly blue-tinted water with no suds. The one we should be using for our cleaning product spray bottles and mop bucket hasn't been working since last November. "Proctologist Gambler" has sent their service people out three times to fix, and NOT ONCE has it worked when the tech left. The third visit, the guy proceeded to spend half an hour complaining to my Assistant Manager that the whole problem was "your employees are pushing the button too hard" and "you made me come all the way out from a call in NYC" before leaving without even attempting to replace mineral-crusted nozzles, so we have no other choice but to mop our floors with plain old tap water.
    Nobody effing cares, and it ticks me off royally - this is a HEALTH and CLEANLINESS issue, and not something that anyone should be slacking off on. I've spent the last 6-8 months hand-dispensing the chemicals and eyeballing the dilution with water (until we ran out of product, and no money in the budget to buy more) and I've been lectured by my District Leader that I don't know what I'm talking about - even when she stood next to me last week watching sanitizer and Dawn detergent NOT moving through the clear tubing (mostly full of air bubbles) that runs from the bottles to the dispensing system.
    I really hate it that I'm pretty much the only one who gives a damn. Why do I stay? Because if I don't give a damn about my customers, who will?

      The first, second and third piece of advice I can give you is observe, observe and observe. Pay attention to everything. I spent over a decade doing multi vendor support and repairs and observation is key. Never just rely on the diagnostics. Diagnostics report on the symptoms, but the root cause can be elsewhere. We had one unit fail multiple times in a month, observation helped prove it was sabotage by a chef who simply wanted a new replacement.

    want to laugh, i worked for 31 years for a company that repaired restaurant refrigeration, we did a lot of Hoshizaki repairs, installs and warranty, covid hit the company went out of business.The company threw away about 10 bin thermostats maybe 10 pumps, pc boards water valves etc, i bet it was 10000 worth of parts. Also customers have no idea- how expensive it is to repair i bet the cost of that repair was 1500- 2000 bucks

    Just had a nightmare of a Hoshizaki that was water falling/overflowing water during initial fill up and harvest. Replaced float switch and it started harvest quicker but still overflowed water. Kept dumping water and not flowing up. Found motor was running reverse direction!!! Swapped hoses and worked great after. Crazy

    Can you touch on NTE'S and quoting repairs and just some tips on working under NTE's or maybe tips to deal with them. For those of us that are newer to NTE'S and quoting. Like this repair and how it related to their particular NTE if they had one. When do you stop and quote vs. just get verbal approval and repair.

    also i would like to add this is just the start , you go on the roof a condenser motor is bad and the condenser dirty, the water valve maybe should be replaced and the bin control is all dinged up, it looks like the bulb could fall in the ice bin at anytime

      How often do you clean the ice maker in your home freezer? I do empty the bin every once in a while, but the water tube and freeze bin? Never. Even if you have ice trays, how often do they get washed?

      Many things like this can be gross. Shake/soft service machines are pretty nasty if they don’t get cleaned.

      Its a Hoshizaki KM series (crescent cuber). They have other cube style machines. This one looks like a KM1300-SRH or similar model.

    I admittedly don't have the first clue of what I'm looking at; but are those solder joints supposed to be in a 'V'-shape!?!?!...and if not, what in the world moved those pipes into that position?

      Kevin, everything you see there is a factory joint, although you'd expect better quality on a $5k unit, all that stuff is made to fit the cabinet and work without much regard to how it looks.

    The soldering on the machine is complete garbage. I get its old but where their damn Saiyan pride! lol
