Hi there. You’re more than welcome for the videos. I’m glad you enjoy them. Of course you could cook the chicken on the hob in the curry sauce. I’d put a lid on the pan so you don’t lose any of your sauce, as it may reduce. You could also cook it in the tm6 like this. 100c in reverse for about 10-15 minutes. I hope this helps. Great video as always. Can I ask what air fryer that is and what you use it for if that's not a stupid question? I currently have the ninja foodi which is a combo air fryer and pressure cooker but I'm wondering whether I should replace that with just the air fryer?

7:34 I'm surprised you bother with these things. I just leave the measuring cup on at all times unless I know something is supposed to reduce in which case I just leave it slightly ajar

Looks good! Ghee is pure fat so a 1 to 1 replacement is a good rule of thumb. Sounds like your reduction to 30g from 50g didn't have any negative effects though. Double cream has a higher fat content than whipping cream so you wouldn't have to worry about it not thickening enough.
