☀Cooking With Mom: Vietnamese Egg Rolls {Cha Gio}

- My mom never fails to provide us with her crispy egg rolls during any event, party or gatherings. I grew up with this stuff, and the junk you get from your local Chinese take out will no longer come near your dinner plate after trying this out! Over the years mom has changed her recipes a few times by adding or removing shrimp and taro. This recipe is the simplified but still very delicious version of her egg rolls. I personally prefer this since I am not a fan of shrimp, plus taro is a bit tricky to cook and prepare.
Note:
Recipe for 50 rolls:
½ cup sugar (or truvia)
2 tsp. Salt (to taste)
2 tsp. Pepper (to taste)
1 Package of Cello phane Noodles- amzn.to/13Bq1Zp
1 egg
2 lbs ground lean pork (turkey meat if you don't eat pork, soy ground meat, or shrimp)
2-3 Large Carrots
½ Cabbage
½ Large Onion
Two Spring Roll Wraps- The brand we prefer is called TYJ Spring Roll Pastry- bit.ly/13g4HFg
Canola Oil

I started to noticed how much my mom loves it when people compliment her cooking. This is the best compliment and she watches her cooking videos about 20 times. It's work, but it's my way to show my mom how much I appreciate her...and she loves LOVES the attention ^_~
I just want you to know I made you moms egg rolls with my family the other night and they were a smash hit with my family and our guest. Please tell your mother thank you for sharing her recipes!!! Btw, my daughter followed your mothers fish sauce recipe to the letter for the egg rolls and our neighbor, who is from Vietnam said it's the best fish sauce she's had here in the States! Thanks again!
I am 53 years old and today was the first day I made Egg Rolls, thanks to you and your Mom!! Great recipes and video! Love yer stuff! Please give my best to your Mom!
I made these on Monday..... They were the greatest egg rolls of my life. Thank you and you dearest mom for sharing.
Every family have their own recipes! That's the great part about food...brings family closer together.
I made this, best thing I've eaten in a long time! Obsessed and I had to freeze half because there was so many but then I thawed them during a party and they were a huge hit! I miss this cooking series!
please never stop these videos.
I did your mom's recipe for every one in my home and that was a HUGE sucess! I was particulary glad because I miss good asian food since I'm no longer living in the US. So... my mind was full of good memories because of that. Please say Thank you to your mom for me!
shes not even talking and i can feel her love!
im so happy cause your family still keep traditional food of Vietnam ... and "Chả giò" so delicious !
THIS IS THE BEST SERIES
Thanks for these 2 recipes. Will attempt tonight. Great video work and descriptions. Keep making them please!
I think your mom did a great job. I'm Cambodian and my mom makes her similar to yours except my mom does not like to precook her pork. She did tell us if we want to make sure that the meat was cooked thoroughly during the eggroll frying period, we can precook it. Some people are very ignorant to personal preferences. Your mom can cook it however which way she wants to and she will STILL make it her own VIETNAMESE STYLE. I watched plenty of khmer cooking channels that have their own style and is VERY different then my mom's. To each is own. Great video. One of the only video that is most likely my mom's style :)
I'm loving this series! Your mom is awesome!
It's so awesome that you both are doing this! Your family seems so close and happy!
I think this is the first I have heard of cooking the ground meat first. Thanks for the tips and will definitely try it next time.
I've been looking for a recipe like this. I go to our local Vietnamese restaurant and they use almost exactly these ingredients.mmm so good!
I'm Chinese and I've always enjoyed Vietnamese egg rolls soooo much more I can't wait to try this!
I made this today. The rolls by themselves were awesome but paired with the fish sauce... it was even better. Thanks KL's mom and KL!
So glad to hear!!! Vietnamese cuisine is my favorite so will surely keep going with this!
Aww..it is so sweet of u to help ur mom do a cooking video
outstanding recipe and I am making this for my family tonight. Thank you very much!
These are amazing! I've just made them, I decided to make more but with a different filling, I put chicken and cheese with red onion , even better with hoisin sauce 💗💗💗💗
These came out so, so amazing for me on the second try. (I only made about 8 with the mixture first try so I had plenty mixture left to try again the next day. I used ground chicken for the meat 😉 .) Had to learn how to turn the rolls without breaking them. I used chopsticks and a small cookie spatula to help me turn.
Also, pieces of cabbage I had in the mixture 1st time were too sharp and pierced through the wrap while wrapping and cooking them. 2nd time I made sure cabbage pieces I put in the rolls we're softer.
It was great that you demonstrated the rolling twice in a row to reinforce learning.
Such a great, easy to follow video that I was able to refer to several times. Well done and thank you!!!!!
Your mom is a great chef
"If you don't like onions, you can surely leave it out."
I use shallots instead - the ones that still look like small brown or regular onions.
A much more subtle, mellow/mild onion flavour. They are also easier on tummies that are sensitive to strong foods.
Glad I found this channel... 7 years late.
made them today, they came out awesome
Looks good, I will have to try them . Had Vietnamese Egg Roll years ago from a guy I worked with and loved them.
Thank you so much for sharing! I love cooking with mom videos!
I love love love this series, please ignore the haters and continue. Your mom is so cool.
This was made with love. I'm going to give this a shot. Great job!
I'm loving these videos! Good job! And many thanks to your mum for sharing her recipes with us ♥
My mom make her egg rolls the same way accept she doesn't cook the pork ahead of time and she add lots of garlic. ❤️❤️❤️❤️❤️
Your mom is awesome
Thank you for doing this video! For over a year I've been looking for an egg roll recipe that wasn't too intimidating to attempt. Most recipes I've found have like over 10 ingredients and involve so much prep and it's just too scary for me to even try! Lol. This one seems so simple and looks delicious! I can't wait to try it :)
haha of course! Love him!
I pretty much just re watch this video multiple times and drool. I must try this out ASAP!!!
Lol excellent narration! Love this thanks! Tell your mom she's amazing
This looks so good. I'm practically drooling. Please do more videos with your mom and her cooking.

I had this last weekend! And i still want some more!
You guys are awsome together. I bet she's one great cook!! I'm definitely going to try this for sure.
These look amazing thanks KLs mom for sharing!
Thank you for the recipe and the rolling technique! I made the rolls with one big change, NO cabbage! I hate cooked cabbage but like it raw in a salad, weird. I was skeptical about the sugar but it makes the roll. Will definitely make again.
Great recipe. I will try this today!
I'm so glad!!! That really makes my mom happy. She truly wants you guys to benefit from these videos. She also tailor her recipes to be a little easier so you guys can actually make them!
Omg your mom us so awesome! I've been dying to try and make these!
I love Chai Gio! I would always peel the chai gio wrap things for my mom when she cooks them.
Oh yea!!! Definitely trying this out!! Awesome Mommy KL!!
My spring rolls always came out soggy until I watched this video. Awesome tip!
wow, this looks great! I'm going to give it a try making it tonight! kudos to your mom for the sweet recipe :D
Looks so good. Now I want some. Egg rolls/ spring rolls are my fav.
Tnx to you and ur mom, im gonna try iT once
Omg! I'm gonna make these this weekend!! I love Vietnamese eggrolls/food!!! Thanks!
Yep , will do!
My mom adds wood ear fungus and tons of garlic she also don't precook the pork because it will get dry and tough. I really like the way your mom wraps the egg rolls with the corner folded up.
No no no Hell no what come on Oh no that’s the way I know it is made at least in souther California. They all have that ear fungus in it and that’s what makes it good
I'm viet as well and it's fascinating to see how completely different our mums' recipes are for this, seems delicious either way :)
Making this today sometime. Thank you...looks fantastic!
Your mom is truly a gem and one of the 8th wonders of the world..... could you upload some more recipes ... anything..... p.s. make sure she cooks with her raggedy chopsticks from the 90s. ha their magical....
Great job. Your mom is lovely.
That brand wrapper is THE BEST to use👍👍👍
I love this
These are really good with fish sauce and sugar dipping sauce. Very nice.
Love these videos hahahhaah I know everyone cooks things differently but I kinda like watching the different ways your mom cooks compared to mine since my mom just mixes everything raw and we use fish sauce and black fungus etc
i love it wen ur mom is in ur vids!!!!!!!!! pleas have her in them more often!!!!!!!
Awesome!! I love bean sprouts in my egg rolls. Yummers. So gonna try these.
I really, really love these videos with your mother. One, I love seeing how people from different cultures cook, and two, I love seeing the bond between you and your mom because my mom and I share a special bond as well. I can't wait to try these recipes myself! I'll let you know how I do! :)
Happy to have found this ;) ur mom is awesome I'm excited for the series
Aww thank you! Mom really enjoys making these videos. She has tons of ideas and lol she thinks she famous now. It's very cute!
Thank you for the video. The last time I made Goi Cuon for my Vietnamese friends, they loved it. This time, I'll make deep-dried egg rolls for them.
Am loving Mama Nerd! Was just now introduced to her via BioNerd, a.k.a. Baby Nerd's vids. I'm so amped to now try Vietnamese cuisine.
Thanks for sharing your culture and cuisine!
Great video and GREAT egg rolls! Thank you! And thank your mother. :)
I will make these! They sound so good!
Love this
This is totally different from how my mom make hers. She uses those black mushrooms and there is no cabbage. She doesn't precook the pork either. I really enjoyed this episode, it shows me a different way of cooking egg rolls. I love Vietnamese food-there is so many ways to make it! Thank you for sharing.
Thank you for sharing you wonderful recipe.

I love how Asian the way she cooks is. Totally reminds me of my mom making these. The best part is wrapping them up, it feels like I am wrapping up a little present. :)
These are the best!
Thank you KL and KL's mom :) I made these today for my family and they loved them so much! :) thank you for sharing this recipe :) I can't wait for more
OHMYGOD that looks sooo good. I'm not viet but I've lived there for 12 years. I basically spent my whole childhood eating vietnamese food. I miss it so much. I'm going straight to the asian market tomorrow and buying the ingredient. btw your mom is so cute and I think you're both awesome~ thanks for the vid

This is just the way me and my father cook these eggrolls and we a few more ingredients but they are absolutely delicious! And your mom's way of knowing if the oil is ready is totally my way as well xD
Thanks! Your Mom Did A Great Job!! You Too..
😍
I have failed at making egg rolls for 18 years. With this recipe, I finally arrived. The egg rolls were fantastic, flaky, crispy and freeze well. I am so excited. I don't have to buy restaurant egg rolls anymore. I can now make my own... and this recipe is so EASSSSSSSSY!!!!
