Vietnamese food is one of the best cuisines in the world. One of the best thing that has ever happened to me was my wife introducing me to her culture. I've had pho and banh mi before, but there's so much more to Vietnamese food than that. We probably cook Viet food the most at my household.

Ceterum censeo Carthaginem esse delendam it depends on the dish, some of them need to be dipped of mixed in sauces or spices while serving
some dishes need to be marinated before cooking or seasoned while cooking like caramelized pork belly or fish (thịt/ cá kho), these kind of dishes usually served with rice because it might be too salty when you eat them alone ( delicious, but foreigners usually don't like the smell of fish sauce so it's not so well-known
      in Western countries).
btw, the fried chicken wing in the videos is waaaaaayyyyy better when coated with some caramelized fish sauce

I can never order from a Vietnamese place without getting an order even though I know I wont be able to finish my meal, I still order them. I wish I could make the fish sauce just like restaurants do. I made it once with a friend and recall heating the sugar to a hard crack, then adding in some water, fish sauce, and lime juice, finished with carrot and pepper flake.
I might need to break quarentine tomorrow and get some...
