I enjoyed your video very much. I just semi-restored a rolling mill. Made by a company called Worthington & Raymond, I estimate it is about 120 years old. Yours has the advantage of the large gear to provide greater leverage. Mine has the crank mounted directly to the lower roller. Unfortunately, I don't have video skills, but I do have photos if you would be interested in seeing this example.

I just bought an older Oliver. It looks a lot like your rolling mill. Mine had solid brass roller bearings and they took off the large crank wheel and added a smaller gesr and a motor. I just stripped it and had bought Rustoleum Hammered Copper paint before I found your video tonight. I will paint it & reassemble and send you picd if you wish?

I hope I didn’t do it backwards. I restored and put it back the way it was. When I tried it, it worked just fine and also there was no other way to put the rollers back.

Your doing it backwards or you have it geared backwards
