This looks really good! I think I would roll up the chicken, mixed with the cream cheese mixture, in ham slices, like an enchilada, then put the cheese on top. I’d serve it with fresh asparagus or a salad with a nice balsamic dressing.

What's funny is that I don't care that much for chicken (I prefer beef), BUT I have cases of canned Ugly Chicken thanks to you because I know I will have several people to feed if things go south. :) I'm hoping that I'll get several recipes from this collab that I'll really enjoy. Thank you
I do layered chicken cordon bleu when I'm too lazy to do the breading & rolling of real cordon bleu, LOL. I use Parmesiano Reggiano, brie, bleu, and mozzarella cheeses. Also use prosciutto since I don't like ham. Then I put crispy crumbs on the top.
@@jenniferrescott1149 It is, and it's just as easy. The prosciutto, being dry-aged Italian ham sliced super-thin, gives it a richness but doesn't overpower the dish. I also make a sour cream/garlic/rosemary sauce to go over it.

For the sauce, just warm up as much sour cream as you want (I usually go with about a cup), add as much fresh or granulated garlic powder (to taste) as well as salt/pepper, and about a teaspoon of rosemary, crumbled. Then grease the bottom of a baking pan and layer with chicken breast slices, pounded thin. Spread on brie. Cover with prosciutto. Sprinkle on crumbled bleu cheese and parmesano reggiano cheeses. Top with mozzarella, then pour on some of the sauce. Repeat with a few layers. Preheat oven to 350F. Cover w/aluminum foil and bake at 350F for 20 minutes, then remove foil and continue baking until mozzarella layer turns golden. Enjoy!
Now this is a meal I can sink my teeth in. So many great flavors. Love this series as it gives me so many ideas for the many jars of ugly chicken I have.

I've never understood calling homecanned boneless chicken "ugly". Bone-in w skin on is BY FAR the ugly/make me shudder chicken. I just can't. But Leisa, your dish looks so good. A fresh, leafy green salad would be a nice side. Yum.

I thought that too but then realized that putting the juices in from the chicken would help loosen it up! Plus you can control how much you put in.

YUM...Great Casserole! I love green beans too....I add slivered almonds & a shake of dried onion....butter never hurts either!
