I prefer biscuits made with lard or shortening rather than butter. I chill the biscuits after I have them on the baking sheet, so doesn't matter if the lard or shortening is cold when it goes in. I make chicken ala king and biscuits quite often- YUM!
Looks delish! The only thing I would change is don’t chubby checker the biscuits. If you twist, it seals the edges and you don’t get the highest rise. 😋 Thanks for the inspiration. Great for left over chicken too!

You put buttermilk in the freezer for at least 10 minutes, melt your butter and then pour it into the cold buttermilk. When you stir it together the butter clumps up in the butter milk, then just pour into your flour mixture. So easy & makes really good biscuits. I can't wait to try this. Thank you for sharing!

Maybe add some baking poweder to your buscuit dough? I think you may have forgotten it. That looks amazing! We made chicken fricasee with cinammon dumplings, years ago. It was so delicous. Chicken was partially fried, before adding to cinnamon and chicken stock. My ex-mil, used busquick, and made drop dumplings, mixed with cinnamon.

I take celery, onions, carrots and whatever squash from the garden , I take the veggies sauté in butter then add brown rice flour, salt free seasoning, lots of dry thyme and cook until i smell the spices then i add the canned broth, chicken and additional chick stock and cook until thick like gravy. I serve it over bastmatic brown rice. I call this dish chicken pot pie without the pie. This is my 95 year old neighbor favorite dish from my kitchen. My biscuits i add flour , dry buttermilk , baking powder, salt, to the dry ingridents then cut the butter and add ice cold milk and gently fold and spread my dough and cut the biscuits with a biscuit cutter no twisting and bake so good.. My husband loves biscuits so does my neighbor.
Yum!! I find it easier to just grate frozen butter on a cheese grater using the large holes. I grate the frozen butter directly into the flour and then toss to coat the butter. The easiest way I have found to do it.

Bill Knapp's restaurant use to be in Battle Creek, Michigan. But its been gone for a long time now. I never went to it, but my friends who were well off went often. I don't know how to say the name of the onion, celery & carrot mixture either except its yummy.
My first thought as I'm watching you make the biscuits was it would be easier to incorporate the butter with the flour if you took your very cold butter and grated it on the largest holes of your box grater. That would automatically give you large-ish crumbs of butter which you could mix with the flour in less than half the time with less risk of melting the butter from the warmth of your hands.
I keep sticks of grated butter in the freezer to make biscuits and pastries a breeze.
Mother taught me to use 2 knives to cut the butter in. (Before pastry cutter came to our house!) Faster than hands and butter stays colder. 😘
If you use 2 butter knives and cross cross them together in the flour and butter, it will chop that cold butter into that flour very nicely

I stick a bay leaf in from the very beginning and then pull it out when I'm done with it. I also use thyme.
That can be served over rice or potatoes also amid other things. Delicious.
