      Mary's Nest : awesome recipe, thank you. Now I have to get some canning supplies 😊. Talking about canning supplies, I went to the links provided in your video information and I noticed that you link everything directly.       Mary's Nest: I can’t thank you enough for this video. I have been searching for a recipe & video that explained canning tomatoes. I always wanted to have homemade crushed tomatoes, especially when tomatoes were in season and being married to an Italian I am always in need of tomatoes :) than store bought!

    In Italy they don't even use a canner. They just put the very hot sauce or crushed tomatoes in the jars, turn them upside down and cover them with heavy blankets and let them cool over night under the blankets. They've been doing that for centuries.

    this is the BEST how to on this. you are a rare excellent canning teacher in that you follow safety procedures, but still make it clear and understandable.     Seriously this is the best water bath tutorial I've seen! Thank you for so much detail description! The finger tight tip is very helpful, and I would have just naturally tipped the jars when removing to pour off that little bit of water. Thanks!

    Good Morning Mary. I just came across this video today. I’m using it as a teaching tool for getting my daughters into canning. I don’t have anything to add because you were very complete in the tutorial. My girls are beautiful grown women now. They are humble which makes them teachable.     I use a teaspoon of vinegar instead of lemon juice for extra acid! I also use a teaspoon of sea salt in canning jar! Have done this for years!

    Thank you for the video. I am always interested in canning. So far I have made jellies the water bath canner and beans and soup in the pressure canner. Haven't tried tomatoes yet, but I will. Started doing Keto diet, so I need a pantry filled with things that have no sugar added.

    Love your videos. I heated my jars in a 200° oven for 20 minutes because my metal wire rack in my water bath canned kept making the water dirty due to being rusty.

    You really are such an amazing teacher, an absolute natural. You are so thorough and clear. I really appreciate you sharing your knowledge, especially since I don’t have any family members to teach me these things. Learning through watching is so much more informative and enjoyable than reading. I have a question, if I may, I understand that oxygen in the jar is something we do not want, but what if we see oxygen in the product after it has been sealed ? For example some chutney that I made had some small bubbles in it even though I did de-bubble and it did seal. Another time a jar of pickled tomatoes had tiny bubbles all around the tomatoes after it had sealed. I’m a bit concerned. Thank you so much.

I followed your process and at the end of this process my crushed tomatoes seem to have separated the tomato and water. I was wondering if this is normal or if there is a reason that this has happened.

    Firstly, thank you for your attention to detail. It really clears up a lot of confusion. Secondly, if I don't precooked my tomatoes do I still boil for 45 min in quart size jar? Or do I extend the boiling time?

      Great question. I think that would work as long as yo heated up the tomatoes again. You only want to put very hot food into a canning jar before canning. Also, be sure to check with the National Center for Home Food Preservation: nchfp.uga.edu/ Love, Mary

    I keep coming back to your video for tomato canning… as many have said, it is a very thorough step-by-step and well explained. In fact just finished my first 7 pints for another year moments ago. Question(s):
    - what can I do (or am doing wrong) to minimize the separation I notice at the bottom of the finished jars right out of the canning bath? Some often have up to 1/4 of the jar separated when I do it. I know it doesn’t mean they are ruined, it just they do not look great. I am sure it has something to do with the pectin and the heating process, but would like to know exactly what to do to help. Ensure the first few added to the pot are brought up to temperature quickly and super hot before skinning and adding the next cups? I may be keeping the pot too cool while adding the remaining 10 cups or so before then bring to boil for the 5 min? Maybe I’m taking far too long boiling and skinning 4 or 5 tomatoes at a time and gradually adding?
    - related a bit to above, how does one try to increase the ‘chunkiness’ of the finished product? I tried this year to keep the prepared tomatoes in slightly large chunks and not stir/mash them as much during the 5 min rolling boil phase, but they essentially came out the same… more on the juice side and of course the separation.

    This is an amazing tutorial. I can see now that in my canning efforts in the past I have done so many things wrong. I have a question about when the jars go into the water. I have seen jars covered and covered just up to just below the rim. Which is correct and should everything you can be covered completely with water in the canner?

    Hi Mary, I went back to the archives to rewatch this episode on canning tomatos. I canned 7 gallon bags from my summer garden and followed all steps precisely, But here is my question, I’m concerned i may not have de-bubbled enough. The jars turned out beautiful, all sealed, etc... but i can see a few little pockets in most jars. I do not know if this occurred during the processing, or if I missed some air during de-bubbling. I’m trying to determine if i should pitch them all, or just wait to tell if there’s an issue down the road when i open to use. Totally understand you may not see a comment on an older video, but if you do I would value your opinion! I have learned so much from you and so appreciate your channel!! 🌹

      Hi Terese, Great question. I think it will be OK. I think we all do our best to debubble but it’s not always perfect. Basically, too much air in the jar can lead to a seal failure. Do your jars looked sealed? Did they “ping”? Is the little “button” in the middle of the lid depressed? If so, they have sealed well. Then just check them again when you go to use them. Make sure that the seal didn’t fail. Love, Mary

    Hi Mary! First of all I would like you to know how much I LOVE all your vdo's!!! Thank you for making them! I have a question about another type of lid. It's one screw-on metal lid with a rubber ring - the same you see used for jams and pickles that you buy from the supermarket. With this type of lid - before doing the hot bath - should I close the lid very tight, or just 'finger tight' as you suggested when using the 2 part lid with the inner seal top + metal ring?

      Hi Virginia, Thank you so much for the kind words! You have a great question but I am not sure how to advise you as those type of lids are not "officially" approved for canning. But I would venture a guess that finger tight would be appropriate. But be careful, since I worry about the safety of food canned in this way.     I think the reason for keeping the tops warm is that it keeps the rubber soft, and thus better able to form a good seal with the jar.

    Mary, I’m planning to try my hand at canning this year.. one of the things I want to do is homemade tomato soup.. do you have a video about making soup from tomatoes? And talk about what ingredients should or shouldn’t be included in recipes intended for canning, as opposed to eating fresh? I looked around a bit but didn’t find one..

      Homesteading family has a free 4-session canning class in which I made tomato soup. I don’t know if this class is always available, but the soup was good, if slightly spicy.
