Well folks, after years of requests, they're finally here: the most tempting polygonal pastries ever put to PC, Sweetrolls from Elder Scrolls V: Skyrim. I've been terrified to take on this digital dessert for years, but after developing a recipe using a buttery-sweet brioche, I think it's finally ready for the main stage. For brioche, using cold butter already cut up into pieces allows you to bypass that entire process of waiting 8 minutes between adding pieces
Does this change the texture at all ? Or works the same just quicker
The point of using warmed butter is so that it kneads into the bread better

I actually started making brioche after this video using a lot of the tips in this video and so far, it’s a massive favorite of my family around the holidays and I do make it all completely by hand (I don’t own a stand-mixer) so, just know it is possible. It takes a while, but making bread always takes patience. And it’s definitely worth it. I’ve only made rolls thus far and I always brush them down with melted butter afterwards. They are always the first thing to go when I take them to holiday gatherings.
And as someone whose older brother is a foodie and introduced me to Skyrim, I’m considering making these if I can get some tube pans and making a joke of it with him.
This is great! Now I can replace my stolen sweetroll!

That sweet roll line was added to Skyrim as an Easter egg about Fallout 3, which was the Bethesda game before Skyrim. In one of the opening scenes in Fallout 3 there is a birthday party for the main character as a kid and a bully steals his sweet roll.
I always imagined sweet rolls as a very dense pound cake but these look nice. I hope I get to play DND at home again soon so I could make these. C:

Honestly, I kind of always imagined Skyrim's sweet rolls would taste like very mildly sweet, rustic cinnamon rolls. Odd, since there's no cinnamon in the recipe, but it's what I think of...
I did too. Probably because I stopped by Cinnabon on the way home after picking up my first copy.
I imagined glazed sweet corn bread for some reason, because it just seemed like the kind of dense bread for the harsh cold of Skyrim.

Weird thing happened on attempt one of my brioche: the dough was far too dry, almost like a tamale masa dough. What happened? Eggs too small?
Edit: Figured it out! After much hair pulling, the addition of water, a complete lack of rising, and many rewatches, it turns out the step to include warm milk was just completely edited out! You can see the edit between the eggs going into the dry mixture and starting the mixer that a white liquid has been added on top. So make sure to add 4-5 tablespoons (or about a quarter cup) of warm milk before first mixing the dough.

Andrew our very own Babish, ah yes Brioche. I read a lot of recipe books and I considered making Brioche, But after several other long complicated French recipes I decided to forgo this one. Watching you do such a beautiful job is very satisfying. My two Kitchen Aid mixers burnt out years ago and the new GE I got to replace them is a toy in comparison. So I no longer have the machine power to achieve the result and my 71 year old arthritic hands are simply not up to the task. Love your content and wry humor. All the best Jim retired.

@@germanmilkman5815 I just wish it had more potential effects in the base game -- there's mods that expand the range of options, but I still think Bethesda could've done more with it.
Still, as-is, I still relished unleashing a bit of chaos with it. I have a standing policy that, whenever I hear a guard make a quip about sweet rolls, I pull out the Wabbajack and blast him in the face with it -- the first time I did that, he melted into a pile of sweet rolls, which made me laugh so hard that I _had_ to make that a policy.

i've always imagined sweet rolls having a somewhat savory taste, with the glaze bringing sweetness to the texture of the roll (similar to british iced buns). the texture in my mind was similar to brioche but like a thick puff pastry that was hollow inside.
The giant one could work nicely as a cake! Perhaps give the glaze a slightly cinnamon sugar addition, or maybe a brown sugar combination with confectioners, and serve!
I always imagined these being similar to a cinnamon roll in texture, not bread
cinnamon rolls are made from an enriched dough similar to brioche.

I've cooked two recipes so far from the Official Elder Scrolls cookbook. the Double Bake Potatoes and Potato Cheddar Soup. Can confirm, they were both delicious. (also tip, if making potato soup, boil the potatoes ahead of time so they don't take an hour to soften when boiling in the milk/chicken stock mixture of the soup.)

When incorporating butter into dough, I find it helpful to freeze the butter and run it through a box grater to get thin strips of shredded butter to keep from fighting big clumps. Especially useful for biscuit dough.

Same for cheese btw: put it in the freezer until firm, especially with softer cheeses.
I do that with my scones, works great but seems to take me forever to grate the butter. I probably need a better grater.
That works for pastry, but doing that with a bread recipe can be problematic.
