I agree 100%! I picked up a nearly new S5 a few months ago for $700. I shoot mostly video (local commercials) and I love the ergonomics of Panasonic cameras. This is the 3rd Lumix camera I've owned in the last 10 years, along with various Canons, Nikons, & Fujis. Paired with a Sigma 28-70 f/2.8, a used S5 is pretty hard to beat for less than $1500. I love the number of programmable buttons on this camera and the dials are well placed. I don't recall having to get into the menu at all on a shoot earlier this week.
Lumix cameras often start out as a better value than Sony, Canon and Nikon. Then they often become an even better value when they release new models. The GH6 is selling on EBAY at times for less than $1,000, which is amazing given it was a $2200 camera. What a value, especially if you are into video. As you noted, the S5 can also be a remarkable full frame value.
I think this is where I am at the moment. Have shot lots of great pictures with this - love the image quality, video, anamorphic features - the 4k 60p crop is a pain as is the absence of 4k 120. Have used it with the 14-28, I really liked this lens but also got very good results with the kite lenses - 50 and 20-60. I really like this camera - shoots beautiful anamorphic but lacks open gate - no camera is perfect....

I am not as sophisticated of a videographer as you are. I shoot MP4s.
