Made the tomato pie and took it to our book club meeting, and it was very well-liked! This has been my favorite dish at a local restaurant, and never knew it could be made so easily! Also- Kevin, you inspired us to make plans to travel all the way from Tennessee to Manchester, Vermont- and stay at the Equinox. Made our reservations already! Now breakfast at the Up for Breakfast! You have become our TripAdvisor too!
That pie is incredible! I’ve been making it for years and passed it on to many folks. I often use a butter pie crust in a casserole dish with multiple layers of tomatoes and fresh corn sprinkled in. This is summer!

Getting inspired by this video (was here for the recipe actually) we booked our stay at the Equinox Hotel and planned a trip to Manchester, Vermont! The season was perfect as the summer rush had not yet started, the designer outlets were empty (no crowds), and the weather was perfect. We took cue from Kevin's video and immediately started walking on the marble sidewalks after checking in. A trip to Burlington on country roads and the mandatory visit to Ben and Jerry's followed. Another trip is warranted just to take in the lovely greenery and the quiet elegance of the town.

What a great idea for a tomato pie! Will have to give it a go. I went to New Hampshire and Portland Maine. Been to NH many times and have lived there also. Portland was fabulous as a tourist. Needless to say I ate well in both places and the weather had just broken from the heat and humidity. Family and friends in gorgeous settings. Now.....back to that recipe....YUM! can't wait to try it!

I love to travel the way you do. I especially enjoy old inns that were once private mansions. I love wandering the small-town street and visiting unique shops. A special dinner out is always an added attraction. Manchester and the Inn you stayed in look so inviting! The tomato pie is going in my recipe collection as summer approaches. Hoping I can find some nice fresh tomatoes from someone's garden.

I make tomato pie every summer. I use a regular pie crust. Pillsbury now has cornmeal biscuits in the freezer section which are amazing. I may try them this year. I would let them thaw and then roll them out and press in the pie plate

I love to travel the way you do. I especially enjoy old inns that were once private mansions. I love wandering the small-town street and visiting unique shops. A special dinner out is always an added attraction. Manchester and the Inn you stayed in look so inviting! The tomato pie is going in my recipe collection as summer approaches. Hoping I can find some nice fresh tomatoes from someone's garden.

I make tomato pie every summer. I use a regular pie crust.
Pillsbury now has cornmeal biscuits in the freezer section which are amazing. I may try them this year. I would let them thaw and then roll them out and press in the pie plate

I would love to try the tomato tart recipe as I’m a big fan of tomatoes and grow my own. We are still enjoying delicious fresh tomatoes each day from our garden here in New Zealand. Is there a substitute I could use for the base of the pie as I haven’t seen the biscuits you use here in New Zealand.

Wonderful time in Manchester, VT. I have not been to Vermont, this was a treat. One of my friends in college was from Vermont. The shops are quaint and the kitchen shop looks like my kind of store. The tomato pie looks fabulous. Our tomatoes are behind and the larger varieties will not be ready until September. Thank you for the lovely tour.
