    Southern fried chicken is made to be fiery, peppery with the ultimate crunch and that’s exactly what this recipe is!
    Honestly in my humble opinion, this the best southern fried chicken - can I say that about my own recipe? 🤪
    Your key ingredients in this are the 2 parts starch to 1 part flour so you get a super crunchy coating!
    This tastes amazing in a simple burger with a delicious light spicy mayo.
    INGREDIENTS:
    -Chicken breast/thigh, flattened,
    -2 parts corn starch (potato starch also works),
    -1 part flour,
    -milk,
    Seasoning for wet and dry ingredients:
    -paprika,
    -cayenne pepper,
    -garlic powder/granules,
    -white pepper,
    -black peppers,
    -salt,

    For anybody that cannot see the recipe:
    INGREDIENTS:
    -6-8 Chicken breast/thigh, flattened,
    Dry mix
    1.5 cup corn flour

Make sure your oil is at 180c when you fry them otherwise you won’t get that ultimate crisp and will cook unevenly. I hope you love the recipe and let me know how it goes.       Dry mix
      1.5 cup corn flour

    Another tip. Double fry your chicken. When you know your chicken is done(or 90% done) take it out and let sit on the rack for 2 minutes...then throw the chicken back in the oil and fry it through for about another minute. Not only will it make it crispier, it will seal the juices in the meat so it doesn't leak out and make the breading soft over time. This especially useful when your cooking for family. Nothing sucks more than you make a big batch of 10 or even 20 pieces of chicken, and after all the work people complain that their peice is cold and soggy with little to no crunch.

    We made this with my mom. They turned out great, although I would suggest less salt (1 ts is too much) and maybe a little less red pepper, but it's fine anyway. Although we haven't added white pepper and used just regular flour, cause there were none in the shop. Thanks for the recipe!

    Ill say this much, fried chicken seasoned with just white pepper, black pepper, salt and msg when done right can taste way better than other heavily seasoned fried chicken. The amount of pepper, salt and msg used can shock you though, it can go as high as 1 : 10 pepper - flour ratio in total by weight. Add chilli powder/cayenne in the dry marinade for the spicy version. Cayenne will add another whole dimension to the chicken. When done right people wont know it is just made with salt and pepper. The place I used to work in does this and people are busting their heads guessing what seasonings are used. The most packed fried chicken joint in town.

      @@Lenamlenge 1kg chicken dry marinated with 5 grams salt, 5 grams msg, 10 grams mustard powder (or 30 grams prepared mustard) and 10 - 15 grams cayenne. Marinate for at least 24 hours.
      500 grams all purpose flour, 300 grams corn starch, 200 grams rice flour (non glutinous), 30 grams baking powder (not baking soda), 20 grams salt, 10 grams msg, 50 grams white pepper (sarawak white pepper), 30 grams ground black pepper (tellycherri black pepper). Mix well and let that flour mixture meld for at least 24 hours.
      This recipe requires you to double coat the chicken, take marinated chicken, coat it with flour, dip in water, coat it flour again then fry immediately. If you do not double coat the chicken, the salt level will be too low.
      You will find out that garlic powder, onion powder and other herbs are not needed for chicken that people would die for. Do not skip any ingredients, they are there for a reason. Take out the cayenne and you will lose the aroma, take out the mustard and you will lose the bite and fragrance.

    I love the way the crust came out! I'm gonna try it with no egg like this - I've always used egg. But, I prefer JUST salt and pepper in homemade fried chicken. Probably because that's how my mother made it in the 70's. No other spices. I think what I'll do is use these spices on ONE piece and see if I like it better. Thanks.

    I made this for Sinday dinner along with some fries. It was pretty good. I mde a spicy mayo to spread on the burger buns. Went well with the chicken. Also had lettuce tomatoes, onions, and american cheese. I am so full right now. Will definitely make again

    I like mixing 60% bread crumbs & 40% cornmeal salt & pepper mix when I make fried fish. I wanted to try chicken but I don't have a deep fryer. The mixture gives it a country fried fish type of taste. Like something somebody's grandma would make. And I bet chicken would be delicious with that mixture, extra pepper.

    The double dunk is necessary for true fried chicken. Whether you do what you did or you can use the seasoned flour first and the the second dunk in clean flour

    I used skim milk because it's all I had and no cayenne so added more pepper. Takes a while to fry tho. Had to re submerge one lol

    I was advised to dry the chicken with a paper towel very well before dipping etc. is this a better technique for crispiness?
