    참치는 잡자마자 영하 50도 냉동보관 하는걸로아는데 이런 해체쇼는 어떤참치가 사용되는건가요 ? 냉동 안시키고 바로 가져오나요??

    단면이 참 예쁘네요. 다만 해체쇼의 어쩔 수 없는 단점이 50상 70상 등 진짜 맛이 든 큰 참치는 불가하단거..

    피 묻은 장갑에 칼 닦고 그 장갑으로 참치 만지고...;;;; 저렇게 칼을 막 조져대는데도 칼이 맛이 가지 않는걸 보니 시모무라 각마 칼이 꽤 괜찮은갑네요..ㅋㅋ

    저 분도 결국은 먹고 살려고 하다보니 아이템이 해체쇼가 된거지, 미들/하이엔드 참치집이랑 비교하면 안되죠. 팔릴 만큼만 주문해서 해동/숙성시키고 분위기며 코스며 신경 쓸것이 많은데, 참치해체쇼에서는 불가능한데 평가질하는게 우습네요. 깔려면 미들/하이엔드로 해체쇼하는 곳을 예를 들어보세요.
    다른 예로 통계에서 매출 순위 상위권 참치집은 미들 근처도 못가는 해동하다만 참치에 김, 쌈장 나오는... 참치는 몰라도 돈은 많은 어른들이 가는 가게에요.

      옐로핀은 빅아이 밑에 급이라 복육은 냉동으로도 횟감으로도 쓰긴 쓰는데요 굳이 저렇게 생으로 해체하면서 쇼잉할 정도에 참치는 아닌거죠 저 쇼를 하는게 오히려 저 업장에 마이너스가 아닌가싶네요 참치자체가 혈이 많이 나와서 맛있게 먹던 사람들도 비위상할꺼같은데...그나저나 인터넷이랑 유튜브같은 발달로 일반인들도 전문가못지않은 지식을 갖춰서 요리사들 먹고살기 힘든 시대네요 ㅋ

    Os coreanos tem a minha admiração. Eles são bons em tudo que fazem. Superaram em muito as marcas Sony, Toshiba, Nissan e vão superar a Toyota. Questão de tempo. As panelas, as utilidades domesticas em geral são maravilhosas e os brasileiros ficam babando porque paramos no tempo, com as trapalhadas politicas impedindo a nossa arrancada.Eles são maravilhoosos e nunca ví um coreano fazendo besteira aqui no Brasil. A culinaria coreana é de tirar o chapéu. Até o atum manuseado por eles é superior ao jeito japones. O sushi deles é indescritivel! Obrigado, coreanos do Brasil!

    After watching many videos, I can tell you that the best technique used for cutting the huge tuna to quarters is the Taiwanese people not the Japanese, any other nationality, I feel that they struggling with the fish, using swords instead of the heavy oval sharp knife that capable to cut the bones easily,,, but again, the Japanese are very clever to make and design a plate of sashimi and very clean...
