STIK ‘EM UP BBQ Chicken INASAL- A Filipino Favorite

  • Chicken Inasal is a very popular dish in the Philippines. You are very likely to find this specialty in street markets, malls and gatherings throughout the country, but in particular, the City of Bacolod, where an entire street market offers this very tasty BBQ favorite. A sign in the heart of the market reads "Manokan Country" (literally "Chicken Country". My husband and I fell in love with this very tasty, colorful and savory dish so much that we wanted to share it with you. Hope you enjoy it too. Sarap!
    Ingredients:
    1 whole chicken cut into 4 pieces as ahown
    1/2 cup lemongrass (chopped)
    1/2 cup coconut vinegar (sukang tuba)
    1/2 cup lime or lemon juice
    1 tablespoon salt
    1/2 cup brown sugar
    1 cup sprite soda
    2 tablespoons ginger (minced)
    2 tablespoons garlic (minced)
    1 medium onion (chopped)
    1 teaspoon ground black pepper
    2 tablespoons annatto oil or atsuete oil (optional)
    For basting:
    2 tablespoons of chicken annatto oil (or oil of your choice)
    1 tablespoon unsalted butter (or margarine)
    Prep time: 1 hour
    Cooking time: 35 minutes
    Total time: 1 hour 35 minutes
    Serving: 4 to 6
