    Today, I'm given an excuse to (probably horrendously incorrectly) attempt some French - both the language and cuisine. An iconically challenging but ironically simple dish becomes the sole phrase in Dexter McPherson's normally-stacked vocabulary, the admittedly-seductive-sounding "omelette du fromage".       I find that of all the emotions, French is most compelling as the language of sadness and loss.
      German obviously beats French at the language of yelling at people.
      I find French sounds rather silly expressing love. I mean, "mon petite cabbage.", really?

      Worked for a French chef once. I dropped a whole bunch of roasted potatoes on the floor just as we needed them to start plating a 200-plate banquet.
      I will NEVER forget those sounds, man! They will haunt me til the day I die! Heck, I thought that WAS the day I die! 😱🥶👻

    It’s actually really cool how eggs turn out that deep orange color. It’s based entirely on what you feed the chicken. A farm in Japan uses chili flakes, chili powder, and paprika to create that deep color. Another fun fact is chickens can’t taste spicy food.

      You can also achieve deep color by giving hens lot of green, leafy vegetables. It might sound counterintuitive, but leaves contain lot of carotenoids.

      Thats what free range chicken eggs look like here in Australia. Having raised chickens myself its a general rule that the more varied and nutritious a diet the chicken has, the more orange it's yolk will appear. Yellow yolks is a sign that the eggs came from underfed battery hens.

    The yolks are orange because they are fed marigolds and dandelions with their food. Both flowers are cheap and easy to grow, and the chickens love them. They can eat all plant based kitchen scraps too, just no green potato skins or citrus.

    farmer fun fact: dark orange or even reddish eggs are a sign of a chicken on a very diverse and healthy diet! it's usually a sign that they are pasture raised, allowing them to forage for plants and insects with a variety of pigments compared to commercial hens who are fed only corn and other cheap grain which make the yolks a sad, pale yellow. pasture raised eggs have different nutritional composition than commercially produced eggs as well. they have better ratios of omega 6 to omega 3 fatty acids and higher content of conjugated linoleic acid, which is all fancy science talk for a healthier, more nutritionally dense egg. these differences are found in virtually all pasture raised animal products as well!
    edit: i didn’t expect this comment to get so many likes and comments, but i believe it’s important to note that i’m talking about truly pasture raised chickens and their eggs. there are methods nowadays to artificially change the color of the yolk without changing the chickens’ diet. but if you’re buying pasture raised eggs from a trusted source, a dark yolk color is a good sign of a diverse diet and high beta carotene (basically vitamin A) levels.

      Our neighbors' chickens were allowed to roam during the day, eating whatever they came across in the woods and yards around them. They'd inevitably lay eggs in a chair on our back patio; IDK what the ethics are re: ownership of chicken and egg but needless to say we called dibs on any egg laid on our property. And let me tell you, the yolks were very much like those of the heirloom eggs Andrew used and they were delicious!

      @@BethMDowney Pretty much anybody I know with chickens would be A-OK with you claiming any eggs laid on your property. A small family having more than a couple laying hens can have more eggs than they know what to do with.

      @@Taolan8472 I have 8 hens (had 9, but hawk). At an output of 7-8 eggs per day in season it is enough for me, my parents, my sisters and a couple of my aunts (including their families). If you can have a couple chickens, you should! They are low maintenance, eat leftovers, tend the soil and provide eggs. Great animals to have around, and it feels a lot better to get produce from animals you know are treated well.

      Yolks that lean towards orange than yellow suggest farm-freshness and well fed diet as well, google image store brought vs farm fresh if you don't believe me. But the orange intensity of the yolk more-so dependent on the selection of diet.

      It depends on the chicken breed, feather color, and earlobe color in your region of England you guys probably have less chickens/hens with white earlobes, which would explain why you've never seen a white egg.😊

      The myth that it's bad to season early arose because prep cooks in commercial kitchens, preparing egg mix in the morning, hours before it would be cooked, realised that adding salt affectsd the protein in the eggs and hence the flavour. Seasoning immediately before cooking doesn't really change much, though.

    I love how the first omelet basically commits every sacrilege possible while making it (cracking eggs on side of bowl, early seasoning, extra large whisk, incomplete beating, foamy butter, metal utensils on non-stick, incorrect agitation technique, american cheese, browning of egg). Might have missed a couple things there, but that's a lot of sin for single, simple dish.

"Freaked out" is an understatement :D I said nothing for the so-called "brie" from the baguette/brie episode because that baguette was stellar and I know finding non-pasteurized cheeze in the U.S. is impossible, but THAT few minutes were hard to watch.

Common non-stick pans are a little iffy on heat distribution, so you might find speckles and streaks of browning across your omelet. A dedicated omelet pan is great for what it's meant to do, but for Omelette au Fromage it tends to cook the curds too quickly because it retains heat more. Carbon steel gives off heat pretty quickly over low or no flame, which allows you to create almost crepe-like outer curds.
      Like in any good recipe, the most important elements that tend to make or break a dish (whether you're a seasoned pro or a kitchen novice) is the quality of ingredients and the utilized cookware.

      A lot of processed foods, using hilarious amounts of butter to just get any taste, artificial stuff to no end and it's just simple
      Compare Babish Omelette from the beginning with his Omelette at the end. The first is a typical American Omelette, the eggs are just beaten with milk to get some taste and texture into them, there is no real skill in cooking them and the he uses yellow American, which is more akin to plastic on milk basis than to actual cheese
      The real French recipe meanwhile takes skill, was developed over hundreds of years of deeply rooted tradition and uses natural ingredients (the heirloom eggs at the end are normal eggs in Europe, for example)
      This is why Gordon Ramsay and pretty much every other European/Asian/whatever chef looks down on American food. It's just seen as primitive

      For any interested, there is a surprising lack of actual skill required to crack an egg one handed. You just hole the top part with 3 fingers and let your pinky/ring finger support the half that stays put and move the parts away from eachother!
      The real trick is to notice that Babish isn't using the bowl to crack them initially.
      Using the bowl could send chunks of shell into the bowl or even pushed into the egg. long story short you end up with a messy crack.
      Instead, if you use a flat surface to crack the center of the egg and then its as easy as moving your fingers apart for a super impressive and clean one handed crack! .

      @@kj134 being fresh gives egg yolks orange color. Freshly laid eggs (out of the hen to around 2-3 days IIRC) have a very orange yolk, after that the yolk slowly yellows out. Supermarket eggs are very rarely this fresh, and also usually pasteurized.

      I heard that some farmers feed their chickens with hot peppers, and it helps provide the yolk with a unique taste and more orange than normal colour. Think the Japanese farmers was some of people who did this.

      @@Glottis American vs British English. You can thank Noah Webster for the difference, he championed spelling simplifications that deleted what he saw as superfluous vowels and weird English behaviors. For example, color vs colour. Also he made other spelling changes like "draft" vs the British "draught". Needless to say, not all of Webster's changes caught on, which is why some words in American English still follow the British spellings. But if there's a difference in spelling you can bet it's likely due to Webster.
      Also this happened back when spelling was more of guidelines than rules. People often spelled words however they thought they might sound, and you would see a lot of variation person to person. As spelling became more standardized, and proper spelling was codified by things like dictionaries (fun fact, the first book to act as a dictionary was the Bible, which people would defer to for spelling of words) how you spelled a word became more of a thing.
      I know this is probably way more than you wanted to know about spelling, dictionaries, and words, but I'm a word nerd, so sorry.
