Pressure Canning Raw Pack Chicken in the Presto Digital Canner

  • The Presto Digital Canner is advertised as safe for pressure canning. Using my data logger to test raw pack chicken will determine whether the meat inside the jars actually reaches the botulism kill zone temperatures for a long enough duration to truly meet the USDA safety standards.

    Thank you. I never get tired of hearing the science behind safe canning. You’re one of the few, if not only ones on YT that go into the detail we need to can safely. There’s so many rebel canners who have given inaccurate and unsafe information to people. I bought one of these pressure canners earlier this year. I love it. I started with some thing simple like carrots. I've canned potatoes, sweet potatoes, chicken and mixed vegetables in broth, pot roast, chili, BBQ pulled pork and so much other stuff. I live alone and do mostly small batches of pints. I've sampled several things and it's all been really good so far. Today I did 5 quarts of chicken, tomorrow I'll make sloppy joes and bean with ham soup. This is my new favorite toy!

      I have seen people recommend really large pressure canners but I also live by myself and wonder if I need something that big. Are you happy with the size? Do you wish it was bigger or will you buy a second one?

    • @sarahireland7727
      @sarahireland7727 ปีที่แล้ว +1

      @@tripudium17 I've been able to can just one or two jars if needed. If I find a good deal on something then I can can it and not have to worry about buying more for a whole. My freezer was getting full and I'm trying to can what is in it before it might get freezer burn. I've made meals in a jar for days when I don't feel like cooking...just heat it up. I canned some chicken and andouille sausage gumbo...no roux. When I'm ready to eat it I'll make rhe roux, add the contents if the jar and while it simmers I can cook rhe rice. The canner also does water bath canning so it eliminates the need for two canners.

    Hello, I used my 12 quart Digital Presto Canner today for the very first time. I have never done this before. I discovered that the instructions for maximum jar capacity says either 5 regular mouth quart jars or 4 wide mouth quart jars. I put in 5 wide mouth quart jars into the canner. I had done everything else correctly. The 5 wide mouth fit. It looks like in your video that you too used 5 wide mouth quart jars in this video. Your data showed that the canner reached the correct temperature.

    thank you so much for all of your testing and for sharing this information with all of us. You have made the canning process more "comfortable" for those of us that are not sure if it works. Since I've been watching your videos, I cannot believe how much I have canned. What is truly amazing is - our refrigerator/freezer went out last week. I was able to can 32 pint jars of chicken, ground beef, and chuck roast so as not to lose it. We also canned several jars of frozen fruits (for smoothies), and vegetables we use for stews. Before "Rose Red Homestead" - I would have been totally panicked. We now have everything fixed without stressing or crying (I'm sure my husband would have been upset and stressed also).

This is easy enough for me to teach my caregiver how to do this and then we can just put the food in and pretty much walk away. Thank you for another wonderful video. I appreciate the scientific method you bring to your testing. I'm still new to canning, which is why I bought a Presto Digital Canner, and now I'm trying to learn the science behind canning so I can truly understand what needs to happen for the canning to be safe and effective.

    I found it by accident that you can skip the jar warming. I hit the arrow button a second time. I think i held it down for a second or too.

    I'm preparing for canning food and binge watching your videos. (I commented earlier that I was awaiting my canner delivery, but have since learned it was damaged during shipping and is on its way back to Amazon. That's ok, I realized that the bigger canner is the one I need, this gave me a way to get it without fuss.)

    I just bought this and used it for the first time tonight for chicken stock. Like a moron I filled the jars with room temp stock before I started. What I did was put the jars in, full and set it. When it got to warm I let it go through the warm and when it got to fill jars I just hit the forward button and it advanced fine without needing me to open it.

    I really kind of like how it warms the jars for you. It makes it easy for me. with my small kitchen I don’t have the room for everything to sit out on the counters or in the sink.

    Thank you for doing the testing with the Presto canner (watched each video) I have been looking at it for a while, but had my reservations. We just built a house and I have a glass stove top, so I’m afraid to can meat with my All American canner on my stove top. I just purchased this canner yesterday and I’m excited for it to arrive. Thank you again for all your hard work.

    August 2022. I have this canner, bought in May. Now the regulator is in the front of the canner when the lid is locked on, making it easier to put on at the proper time. I have enjoyed using my Presto Digital canner.

    Presto has an official Facebook group ran by Presto personnel. They state in that group that you are pre-warming the canner and water, not just the jars. It is a necessary step and frankly, after owning one for several years and using it for hundreds of jars, it's not a bother to use. I set up the canner, set it to warm, and go abt my prep. It warms while I'm dicing the chicken or whatever and doesn't take any extra time that I'm not already using doing prep. That being said, when running back to back batches and the canner is warm, some models you can press and hold the play button for 2 seconds or so and it will skip the warming stage. This is also unnecessary IMO because it reads the temperature and says oh hey, we're already warm and lets you move forward much more quickly.
