Canning Chicken Breast (Raw Pack) for Beginners: Step by Step Instructions

  • Welcome to Grow and Preserve! Today we're going to can chicken breasts. It's so easy, you won't believe it. You're going to want this in your pantry because it makes such quick work of dinner. Turn it into chicken salad, burritos, tacos, enchiladas, stew, bbq chicken pizza, chicken corn chowder, chicken noodle soup, etc in roughly 15 minutes. Super easy and delish! What could be better?

    There is no way i would ever give up that wonderful broth from the jar! I put into small containers in the freezer. Wonderful for making gravy, pan sauces or adding to soups!

    Wonderful Tutorial! I do the same thing with my chicken and beef and pork! I love lean! I love canning chicken and I am going to be canning more tomorrow for my elderly dog that is in heart failure and she would not eat anything else but loves this chicken pressure cooked.

    Thank you so much Carter! I found chicken thighs at my local grocery last Wednesday for $0.97/lb! I canned some raw pack in quarts and some in pints. Today I had a pint (2thighs) for lunch along with a pint of your chili (spicy!) and the thighs were so juicy and the bone broth was amazing with a little salt and pepper. The bones were so fragile they crushed when squeezed in a paper towel so I fed them to my chickens. The marrow looked great. Thank you again for giving this 54 yr old non cook some wonderful instructions!

    Looks yummy Carter. I have planned to can breasts in a couple days. I've never pressure canned meat. I have watched plenty of your videos and looking forward to more. I trust you. You know your craft! Thank you Carter.

      You're welcome! It's so easy and no extra dishes to wash! Plus, it's crazy versatile this way. Since the InstantPot came out, there are so many recipes using shredded chicken. Raw pack canning puts you one step ahead for all of them! So happy to have you here, LL!

    Hi there! Canning chicken tonight so I thought I'd drop by and watch you can chicken while I cut chicken up. I use my dark meat for soups/stews and white meat for anything where I'd want a more whole piece of chicken, like in chicken salad. I make my chicken salad with pecans and grapes, but I also like to use apple instead. Never tried the cranberry but that would be good. Cheers!

    I have tried (and failed) to dry cranberries. Could you please do a video on that?

      I have not tried, but perhaps we can give it a shot while cranberries are on sale. Let me see if I can track some down. I've also had several requests to show how to can low carb cranberry sauce. I could do both in the same video. No promises, but I'll try!

    Lol I don’t like tendon and pieces of skin left on either! I am new to canning and really want to can chicken especially when I go to the store and there are no breast! I wanted to ask about the texture of the canned chicken and is it fully cooked after canning? Thanks so much for sharing your knowledge!

      It is fully cooked when the canning process is done. It comes out like shredded chicken. I use it in lots of videos, but the quickest one to watch is this one: th-cam.com/users/shortszfp-ymtqFQY I use it straight our of the jar to make chicken salad.

    Can you do a video on using your digital canner with raw pack chicken. I am not sure how to get around the canner wanting to heat your jars first and if that is a problem.

      This was frustrating for me as well when I first got the electric canner. You just have to outsmart it! Cold food. Cold jars. Cold Canner. Prepare you jars of raw chicken for the canner. Then start the canner as you normally would. Put in the 75 minute processing time, insert the fully loaded jars. The canner will warm them up slowly, just like you would do on the stovetop. When the canner says to fill jars, just hit the knob to tell it you've already done that. It'll then continue with it's regularly scheduled program. ;-) Please keep me posted on your progress, Tracey!

      @@ruthhunt5710 Not crazy! Pretty normal, actually. Start with something low investment, like chicken broth. Make a point to use it. Get used to it. Then move on to other things that would be super useful for you. In the video released today, I'm canning turkey in the Presto Electric canner because my husband loves to have "turkey and gravy" throughout the year. Also, always feel free to ask questions. Everyone is nervous in the beginning.

      Carrots are so dense, much denser than potatoes, I think I'd be uncomfortable with it.

    I tried canning chicken this year. Very easy. I was trying to find a video on canning pork, but I couldn't find it. Can you tell me the title of it ? Thanks for this. I'm a new subscriber. I have a freezer full of pork !

      I have not done a video yet on canning pork, but it sounds like I should at it to the list! Is it the fattier cuts you have...pork butt or shoulder? These work very well, as long as you remove most of the fat because it really fills up the jar. I find it easier to cook the pork first and then can in just a bit of broth. I have also tried the leaner cuts...tenderloin and pork chops but haven't liked the results.

      Absolutely. Same processing time of 75 minutes for pints. Just put the cold filled jars in from the beginning, so they'll warm up slowly with the canner.

    I haven't seen anyone pressure can chicken thighs. I raw packed boneless thighs and the meat that wasn't covered after the processing is a greyish color. I am apprehensive for that reason. Is it okay?

      It should be just fine. I think cooked chicken thighs are a bit gray anyway. Also, often when meat is not entirely covered by the liquid it gives off, the part exposed will take on a grayish tint. I pressure can chicken thighs as "chicken nuggets", pre-cooked enough to keep their shape. No problem raw packing them though.
