👏🏻👏🏻👏🏻👏🏻 You are honestly the ONLY person I would trust with testing on this. Your presentation was beyond phenomenal! I want to thank you so much for breaking it down and explaining in great detail every step of the process and why. 👏🏻👏🏻👏🏻👏🏻
Ok, I was wondering about what Kneady would say, so there she is poking it. That is 2 great canners that I would trust. Good info to have n now I just need to feel safe n use the all american.😶🙄
I see no licensing, no ads, no affiliate links, and no sponsors. Am I really seeing a fully educational, non-monetized sharing of information? On youtube?! Girl, you're a freaking pioneer.
You got that right! We think that is in conflict with our personal ethics and we do not want to be beholding to anyone for sponsoring us. We are most interested in getting accurate and safe information out there for everyone who wants to learn about emergency preparedness without pushing products at them. Thanks for noticing--we appreciate that. TH-cam now inserts ads whether we want them or not and we have no choice on what the ads are. We have monetized their ads, but that is all.
As a chemist, you are speaking my language. No nonsense, good experimental design, painstaking documentation, and repeatable results. I’m so pleased to have found your channel, you have helped me make a decision to purchase a third Instant Pot. I live alone, and the Max will make it so convenient to preserve a full recipe of soups, stews, etc. thank you so much! 👏👏👏
As an ER nurse, I once had a patient present with symptoms of botulism intoxication. I knew what caused this. Her home canning. I just could not explain to her in a way she would understand what, caused her condition and how to prevent botulism in the future. Boy I wish I had your TH-cam channel then! You were wonderful. Your explanations were easy to understand. I have recommended this video to my old instructor. Thank you for being so wonderful. Best wishes, Debora
@@shannonfbc1 both sad and scary, I think there are many ‘old school’ home canners out there whose moms and grandmothers only ever did water bath canning. Due to survivors bias they assume it’s because their methods are safe. I have two older family members that think this way and let me tell you, the low acid canned goods they give us don’t get eaten 😳😞.
@@RaqVA and its impossible/pointless to argue with them because they claim the Amish still use water bath canning for everything. The only thing is, I've never seen anything but high acid canned foods for sale in our local Amish stores. Idk where they're getting their info.
@@shannonfbc1 unfortunately there are a ton of new homesteaders and canners sharing what they call "rebel or renegade" canning recipes which is truly Russian Roullete canning. When asked if they understand the risk, they say yes, but never share that with their viewers, they only say "do your own research" which imho is just a haughty way of telling safety first canners to mind their own business. In the next coming years, I expect to see many new cases of botulism.
My hubby and I both hold science degrees (hubby has a PhD), I can't thank you enough for your channel and all of these videos! It is MUCH appreciated!! We too are often frustrated with the very unscientific information one has to wade through online. I was practically jumping for joy when I saw your data graph, this is right up our alley, I love these experiments and this research!! Well done and much respect to you. Thank you again.
@@RoseRedHomestead I appreciated the self-testing portion. Obviously if it isn't getting up to 250F then the pressure isn't getting up to 15psi. The reason why they recommend 250 for like 15-20m is because that destroys the toughest spores some of which can stand 5m of 250F. It is what sterilization autoclaves for biological scientific experiments use. It really isn't getting to sterlization temperatures and pressures, but I am sure it kills a lot of stuff. Thank you for having the data.
As I am a professional scientist myself, I must say that I am greatly appreciative of your work to substantiate the canning capabilities of your IPot! I find myself, as a result of the state of our economy and geopolitical events, looking for resources and practices that can help to insure a more prepared pantry for my family due to the gradually increasing and consequential market supply issues. Your video has aided me tremendously as you addressed so many of my surfacing questions regarding in home canning practices. Great job and much gratitude!
@@RoseRedHomestead Money isnt worth the spit in the wind. And it is getting worse all the time. The false sales that they do is wrong. Some one needs to right it some how. Nice video thank you.
This was a “Master Class”! It was wonderfully done. The time you took to perform all of these tests is a real labor of love. Thank you so much for doing this. I’ve been considering buying the IP Max for several months now, but I’ve held off because of the fears of it not being effective. I’m so relieved and will be ordering my Max as soon as possible. Like you, we are empty-nesters and a large pressure canner is just too big for our needs. I love your channel and look forward to each and every video. Thank you again. PS - loved the roadrunner footage. 😀
I know you consider yourself a "secondary source" but wow! What an amazing secondary source you are! You are so detailed, organized and safety conscious. And everything is from a scientific standpoint. So important! I appreciate you educating me. I am learning so very much from you and Mary over at Mary's Nest. The wealth of knowledge is amazing. Thank you so much! Much love ❤️
Pam, you and Jim are brilliant! I’m an M.D., M.S. and was glued in place for every minute of this video. You remind me so much of my younger self. I was also a Registered Medical Technologist, and loved the lab and creating experiments with patient data. I’m now 76 and retired, so just thoroughly enjoy watching another like-minded professional. Thanks so much.
5:55 I had to stop right here and say thank you to you and Jim. I so appreciate the lesson you are giving and especially, taking the moment to share the road runner. Thank you.
I first saw the 41 minute video time and thought I’d never finish the video. Watched every minute. Thank you for your dedication and sharing your knowledge with us novice canners. Happy New Year!
Now that's what I love about you and your videos - teaching science and excellent food safety while having Jim turn around to catch the road runner on video for us. Fabulous! Please keep up the good work!!!
Thank you for investing so much time in testing this process scientifically and passing along the information to all of us. We are so blessed to have you and Jim to provide us with data and analysis we can trust. (The road runner was a nice surprise!)
I love how you took the time to show the roadrunner. Growing up in the Utah dessert, I remember seeing so many roadrunners. On a second note, I finally got my grandma's Presto pressure cooker from the '30s or '40s refurbished and ready to go. I'm just waiting to schedule an appointment with the Extension Office to get it tested and recertified.
I'm not interested in using the instapot to can with but I can't tell you how much I appreciate your explaining botulism in a way I can finally understand it and how pressure canning kills it. Thank you, thank you, thank you!!! Always watch your videos and you've always been so helpful as a new canner.
I think I speak for most canners, we LOVE the scientific approach you take on your videos. This video has blown every other canning tutorial out of the water! This video helps to portray how science and (culinary) art merge and harmonize to make delicious, shelf-stable food. Thank you!
Wow, thank you! I really appreciate your comment. I also agree that most people who are into canning appreciate a more scientific approach than is generally presented, and I love that!
From one scientist and canner to another BRAVO!!!!!!!! I hope that you will publish a paper on this great work! I would appreciate knowing the specifics on the data logger. I want to get one of those to use in my experiment here at just below 1000 feet. Thanks again for this great work!
Kathy, Thank you. I have just posted the logger info below the video. If you decide to go ahead with testing, let me know and perhaps we could collaborate. I would love to get data from a different elevation.
@@RoseRedHomestead Thanks so much Pam, I will place an order. I love Thermoworks- they have great products- I have used their Thermapen for several years! I will let you know when I get going. My IP Max s on the way.
This is the best video ever for me at just the right time. I wanted to be able to can some chicken but didn’t want to purchase a large canner for just me. I am so happy I could cry knowing everything I learned watching this video. Thank you so much for your ability to teach this ole gal new things. Can’t wait to purchase and to use this new method. God bless
I've always wanted to do canning, but honestly was scared to try. Tonight I went on Amazon to just look at what they had as far as the canning appliances, and when I read about the Instant Pot, someone actually mentioned your name in the Q&A section, and to check out your videos. I am thrilled to have found this video and your page! Thank you so much for such a detailed report and especially the example at the end on how to can chicken. I am ready to give it a try. I live at a little over 1700 ft; I'm glad you mentioned that feature on the pot. I'll make sure to purchase that exact pot. I'm looking forward to watching more of your videos. 😊
You did an amazing job of reviewing the IP and explaining botulism and how it thrives/dies. I have been using my IP Max for canning the last month and have been loving it. I no longer have the stamina (between age and cancer treatments) to do large batch canning, so this has been wonderful to have. And, by the way, you and Jim are adorable!
Incredible! I "follow" approximately four sites regarding canning and I can tell you, I trust you with no hesitation. I thank you and appreciate sharing your knowledge and explaining it so even I can understand not only what to do but why to do it! God bless!
Some weeks ago when I notified you of the Instant Pot Max and you told me you were going to check it out I have been patiently waiting. I have not been disappointed in your review and will start using mine for small batches. As they say in Baseball you have Hit the ball out of the park. Thanks again Rose for a very informative video.
I FINALLY took my IP Max from out of the box after I made my own veggie stock using veggie “scraps” I’ve been putting in the freezer and from my garden. I rewatched your video and I am so happy to be able to now have 8 pints of veggie stock on my shelves. Thanks! I ❤️ your “how to” videos.
@@RoseRedHomestead actually that is one of the things I am enjoying so much in your videos. The content and presentation are fantastic, but you also roll with spontaneity and humor. That takes it next level. I am a big fan now. I love how your personality shines through! ❤️
Thank you SOOOOOOO MUCH for this information!!! I’ve always wanted more information on this. I appreciate ALL the hard work you do to educate us all in food preservation and food production!!! I LOVE your channel and videos!!! Thank YOU!!!
A person who was reviewing an electric canner on Amazon recommended that people watch this video before purchasing that product, so that we could learn how to can safely. I am blown away! I’ve always been terrified of canning for fear of botulism but now I feel more confident. I do need to do more research about which psi is safe at my altitude of 5,545 feet above sea level (Colorado). But this is a great start. I don’t need to can a lot because it’s only my husband and me, but I would love to can and provide as gifts to family, friends, and neighbors. I love to share anything I am blessed with.
You are the best teacher! I'm 75 and haven't been in a class room for many years yet I follow you, take notes and enjoy every new adventure ! Thank you
Thank you, outstanding research that brings joy to this old, retired aerospace engineer! I knew when I spotted the cover of your engineering notebook that it was going to be good and it was!
Wow! What a great scientific experiment. How absolutely awesome that you did this at home! Thank you Pam! I'm so honored to be one of your TH-cam students. 😁 Please do some more canning to share with the IP MAX. I would like to see some Weck jars too. Thank you Jim for catching that Roadrunner on camera it was a serendipitous visit for sure. 🦋
Based on your videos, and the research that you provided, I began canning with a weighted canner. Although pleased at my work, I am fearful of every jar I open, boiling 10 minutes before eating. Watching the IP Max for a while, I debated up until they offered it up for half price. I bought one immediately. It took me a few days, and a few simple foods, to become comfortable. Today I canned my first meat in it. No anxiousness, no worries. Just a calm process. It did everything as I expected and I am grateful to you. I wrote down every step you experienced and it was like you were there every step of the way! Thank you, humble teacher!
Veronica: I think what you have done in overcoming your fear about canning is fantastic. Let us know the results as you can various foods. Thanks for watching our channel. Jim
I was going to buy the Nesco, but no one has it in stock. This looks like a great alternative. I'm very new to the idea of canning, so I'm really grateful for your scientific analysis of these appliances.
I’m in the same boat as you! New to canning and was going to get the nesco but when I emailed them regarding availability was informed they couldn’t even guess as to when they will have them. So this is a great alternative for me.
I have been reviewing your channel, and I so appreciate the scientific approach you use to provide information. Yours is very much my most desired channel! You work full-time and I am in awe of how you find the time to make these videos, but I so appreciate them, and you!
I can't wait to wow my friends with all this knowledge. I feel as if I just took a biology class. What a great video. I am new to canning. This was very helpful! 👍
Thank you for doing this testing. I have been using the Instant Pot Max for canning for several months. I have not had a false seal. I sit and watch the canner the whole time to make sure that the time does not go below 240, and it has not gone below 244 doing the canning process. Safety is first. Thank you again for doing this testing. Change is good. This will help people who want to go this route, and provide options if they would like to use it.
Thank you for your comments. Those temperature levels appear to be pretty good! It all depends on the temperature of the food in the jars, but my data show that at those temperatures showing on the outside, the food on the inside is within the safe zone.
WOW. This was a wonderfully well done video. I learned so much and appreciate all the hard work you put into this! I don’t know if I have ever had a question answered as satisfactorily as you just did. Absolutely incredible. Thank you SO much!!
Such great advice!!! i went and ordered the datalogger and trust me, it validated what you are saying about making sure your Instant Pot Max Canning feature gets into the 'kill zone'. Having this scientific evidence actually makes me more confident that i wont be killing off my family with botulism. The datalogger is pricy but no comparison to not confidently knowing if you have destroyed the potential for botulism....thank you for this education Professor! Priceless!
You are AMAZING!!!!! I don't know when I have enjoyed a presentation as much as I did your. I have always canned our garden veggies, but you answered a lot of questions that I have wondered about in recent days using an electric canner. Thanks for your time and effort in preparing this video for us. You are a resource I will keep for a long time.
I've been canning at 8500' with the Instant Pot Max for 3 months. It consistently cans between 244-248° I've discovered if you pack something really cold and dense that, if it drops below 240°, that it will abort.
That is good information about the aborting--another great safety feature. Your temperatures seem good, but for me, I would want to know the temperatures of the food in the jars to be certain. Mine never got above 247, so on the surface, your experience seems ok.
This is an EXCELLENT video. Superbly researched and well edited, and the lady presenting is clear and intelligent, with a compelling charisma. There are a lot of “newer homesteader” channels which folks giving bad or questionable advice- as a certified master canner for 20+ years I can say this woman knows her stuff. Thank you and well done! New subscriber ♥️
I purchased an Instapot Max after watching your series on digital canners (and many more topics) along with this video. Today I watched it again as a refresher and have raw pack chicken pints on the go. I’m very grateful for all that you share with your online family. ❤
I was never confident enough to try pressure canning until your broken down basic explanation and appliance review. I am deciding which one to buy. That you, you are a great teacher!
This was wonderful! I'd like to add about two dozen more "likes" to this video! :) There isn't anyone looking at canning videos on TH-cam that shouldn't watch this! I've been canning for years and this was helpful to me. THANKS!
This video and YOU are just bonkers awesome! I will not trust my old pressure canner which doesn’t even show what the pressure is, and will buy this IP Max. I am nearly 80 years old, feed only two of us, and I am severely visually handicapped, so this will assure me of the safety of my canned food. I cannot begin to thank you enough! Thank you, thank you, thank you! 💕🥰💕
This is the best product tutorial I've seen on TH-cam. Answers every one of my questions, teaches me some new stuff, gives me some tips on what to look out for. Brilliant! Anyone who is reading this comment, give this woman a thumbs up/like on her video, she deserves it!
Thank you Pam and Jim for posting such great informative Videos, I always look out for all your presentations. You are the only one I go to for all my canning ideas, tips and techniques. You are exceptionally informative and your explanation is easy to understand but most of all you are very patient and well prepared. Your kitchen is immaculate and that is what I love about you and the way you prepare before making your videos. Thanks a million for your great service to all of us who are just beginners like me. Blessing to you and Jim for putting it all together.
Thanks for this video! I purchased my new Max based on it! It arrived yesterday. Yesterday we started processing an elk we’d been given. My freezer is pretty full. I’ve run 2 batches through it. I’m an avid canner & think the Max is going to help me immensely! Appreciate your thoroughness!
She is my favorite canning channel I love how she explains everything that easy to do. I love this channel God bless you abundantly and always and your family. Thank you for your expertise and teaching. ❤🙏🏿❤🙏🏿
I want to thank you for this wonderful presentation. It was beyond my expectations. I’ve never done canning because I was afraid of doing something wrong, but now I’m ready to go. Blessings t yo and your husband.
This was SO informative. When I first saw canning in an a Instant Pot I thought oh no, I glad something told me to watch. I love the idea of small batch canning. There are only 2 of us in my household and I don’t need a ginormous supply in my small pantry. Thanks so much for sharing this wonderful research with us.
Learned so much.. enough to be scared of botulism & not playing around with the canning process. I might add, this is a brilliant woman & I am so impressed with her.
I just came across this video and am soo glad to have found it. I’m new to canning and have been trying to decide which pressure canner would be the safest (in every area: pressure, temp, kill zone, etc) to purchase. This demonstration was exactly what I needed! Thank you for such thorough explanations. Thank you for your videos and turning the camera so we could see the roadrunner.😃
This was facinating, Thank you so much! I bought an Instant pot max specifically for canning and now I have much more confidence Thank you!! Peace and love to you and yours during these crazy times.
Thank you so much for all the work, the testing and sharing this information . I deeply appreciate it. I just ordered the Insta pot max. I had been using the presto canner of years, and yes, outdoors during summer. I own the regular insta pot and use it constantly but have not used it for canning. Now with the 'max' I will be able to can safely .
Much respect to you. Love your videos. I’m a first year canner at 55 years old and I love it but always refer to your videos before I do anything. Thank you.
I love this woman! I have learned so much about safety to do with canning. Sure I have watched canning videos before but this lady goes into depth without boring and gives the nitty gritty information that we ll need for safe food canning. Thank you so much, you have a new subscriber! Greetings from Hampshire in England!
You have almost 2,000 comments. You are teaching all generations either how to can or how to adjust prior canning protocols. Please know that your viewers realize that what you are producing has taken time, money and energy. Thank you...and I hope you feel as amazing as you are.
Susey Q: Thank you! That so nice of you of you. I think in the three plus years we have had this channel, we have mentioned the time, money, research, and safety protocols we think our viewers/subscribers need to know to can with the confidence that their foods have a greater probability of not causing harm to the family and friends they feed. This is also born out with the introduction of Pam and Cindy's book, the classes, the Web site, this You Tube channel, and our face book page. We think you for your support and confidence in us. We now have 152,000+ subscribers. Jim
@@RoseRedHomestead Jim and Pam, I saw that you have 152,000 subscribers. Congratulations, that’s a terrific milestone! With the current state of our union, I would think that you might be getting quite a few more. I am a long time canner but I’ve still learned quite a bit from your channel. I have always feared canning meat of any kind. But, with your direction, I’ve been doing it. I will also open a jar a few days after canning to make sure that things are what they should be. As an RN, I’ve been a stickler for keeping bacteria and fungus at bay. I must say, I don’t know how the two of you do everything. I believe you still work, you experiment prior to filming, film, tape, edit, have family time....it goes on. Even if you are retired, it’s a lot! Again, thank you both for presenting a well thought out channel that I connect with.
Bless your heart. I am thrilled with this tutorial. I have resisted getting an InstaPot because I feel like it is another appliance I don’t need since I already own a regular pressure cooker,(not for canning use), a rice cooker, which I rarely use, but my husband does, and two crockpots. That being said, I have never done pressure canning and am now giving it serious thought, but my age, I’m a few years older than yourself), my semi-handicapped status, make me not very enthused about a big pressure canner. This small one just might work for the two of us at this time. I keep hoping I won’t live long enough to experience the latter day tribulations, but they seem to be encroaching fastly upon us and the prices are now going up quicker than I expected. I will look into getting this kind of InstaPot and giving it a go. You do take the scary down to a tolerable level for me. So thank you.
Thank you so much for taking the time to do all this testing, studying, experimentation, and filming. I feel very informed and ready to make my decision on which IP model to purchase! I am at 671 ft above sea level, so no need to worry about elevation for me. But the information about botulism and kill temps, etc was PRICELESS. Thank you!!!!!!
Thank you so much for sharing your instant pot recipe! Your video is clear and easy to follow. Informative and visually pleasing. I use my instant pot everyday and I make instant pot recipe videos too so I am always on the look out to see what everyone is using their instant pots for. Canning is something I haven’t tried. This will come in handy when it’s time to harvest my garden You taught me something new. Id love to continue to learn from each-other.
Thank you for taking the time to do all this research and showing the entire cold pack chicken process with the instant pot max in the the video. This is the best video I have ever seen on TH-cam on canning, your presentation, breakdowns, charts, and data was impeccable. Truly impressed and thank you for doing the video for us all. I will definitely be buying a instant pot max to start canning with. Thank you.
You are an amazingly detailed teacher! I’ve just discovered your channel & am binge watching, learning SO much. Thank you for sharing your extensive knowledge & testing results. I remember my mother talking about HER mother exploding an old fashioned canner, so I’ve been fearful of them all my life & never wanted one. This IP MAX has changed my mind. Thank you!
You are so welcome and we are so glad you found us! I love the Max and personally consider it to be very safe. I use it all the time for pressure canning and in my testing, it has never failed to be safe.
Thank you so much for all the time and effort you put into your work. You are my go to person for canning. I am never disappointed. Because of you, I do more canning now and am loving it. I live at 7,000 feet elevation so I'm looking forward to what you might do in the future! ♥️
You are so welcome! I would like to test the Max at your elevation...maybe we can take a trip to the mountains once warmer weather arrives in the spring.
I purchased a Instant Pot Max. I wanted to start canning, and was scare of the manual pressure cooker. You are the reason why I am able to can my food and not be scare. Thank you sooo much!
I love the data. Speaking as someone in steam plant operations, if you know the pressure you can interpolate the temperature with a steam table. For 240°F you need approx 25 PSIA. With that said, I'm confident my instant pot duo is able to maintain the pressure. I'd still be interested in doing some experiments with a logger.
Thanks for your informative comment. Sadly, the Duo has been tested by the Utah State University extension and was found to not reach high enough temperatures to kill botulism spores. So, please be careful! The Max has passed my unofficial testing at 5000 feet and is the only Instant Pot with a canning cycle so far.
@@RoseRedHomestead Does this work the same at sea level? does one adjust the settings for sea level? I know you said you tested at 5,000 feet or meters I think.
Wow! I am so pleased to have found your channel. I am much more informed about canning standards now. Lots of time and energy went into these trials, so thank you!!
Pam Bilyeu here…. This was so fabulous. Too many people overlook the importance of the science of pressure canning, your explainations cement in our minds the SAFETY of how it is done to achieve a product you can have confidence in eating. Thank you for the time you invested in your thorough analysis!!
I started using my Instant Pot Max today and I love it!! It is so easy to use. The only drawback is that you can only do 4 pints at a timel I did 24 pints of tomato juice. The actual cooking time with the venting, cooking and cooldown was much quicker than my big presto canner. I liked the fact that you don't have to watch it continually to make sure the pressure is staying where it is suppose to be. I have set out 3 lbs of ground turkey to thaw and tomorrow I am going to do 3-4 pints of turkey. Thank you for your knowledge and your willingness to share it!!
Oh my God! Thank you from Spain for your safe packaging master class. I followed his video with subtitles because I don't know English but I found out super well. At least the basics and most important to do my own research in Spanish. Without your video I wouldn't have known where to start. Thanks a million and a big hug!
The roadrunner is so cool. Thanks for showing. We moved to Ok from Maryland in 1986 and I expected to see roadrunners , but only saw one in all that time. Of course I love your depth of instruction in your videos as well. My husband passed away in January. He also was a scientist ( phd in biochem ) . He liked to help me can. I hadn’t seen many of your programs while he was with me , but I know he would have loved them even more than I do. Thank you so much & God bless.
Today you truly were 'the lady with a gadget' and what a gadget it was! All your efforts and hard work have proven you are a fantastic "canning teacher". You have showm that you do know exactly how safe canning can be, provided its done correctly. Thank you!!
You’re a natural at teaching 😉 Thank you for this info. I’m catching up on past videos. I have an InstaPot that I’ve never used just like I’ve never used a pressure canner. I’m feeling so inspired to give it a try! I’ll also be looking to see if you have any videos on using a regular pressure canner. Thank you so much!
We have several videos on pressure canning in a regular canner. I much prefer a regular pressure canner, but I do thin=k the Max is safe enough that I use it for our family.
To say I LOVE YOU would be an understatement. I love and appreciate your brain and your presentation. Colleges need more Professors like you. I’ve always been to afraid to try canning. You make it so straight forward and easier to follow. When you pulled out the data logger and the excel spreadsheet, I smiled so large. You are my kind of lady. Thank you. ♥️ BTW, I made my 2nd batch of bread this week and they turned out perfectly.
This is one of my favorite canning videos, and I have watched it multiple times, as I’m watching it again I look over at my counter where I’m currently canning in an Insta pot Max. I was so impressed with your video on how you scientifically identified and tracked and verified the internal temperatures of the food that makes the difference between someone saying oh we’ve always done it this way and this is how you got to do it versus this is why you have to do it.
Thank you for all these great informative videos. I bought an instant pot max and just finished canning my first batch. I canned some home made, cooked butter chicken. I live off grid as much as possible using solar power. I live at 499 feet elevation, so I set my instant pot max to it's lowest which is 600 feet. And canes for 75 minutes. It's going to be awesome preserving food with no long term electricity use.
Such a well laid out, educational presentation. You are amazing! Thank you for doing all that work and sharing your wisdom with us. Blessings to you and Mr. J

Wow--what an experience! Thank you for your kind words.
Wow that's scary and surprising I thought it was drilled into all of us to go 100 by the book with canning.
That is awesome! Thanks for sharing your backgrounds with me! And I appreciate your kind words.
Yes ma’am ty so v much
Finally, a masterclass with actual scientific data! Thank you for all your research! Instant pot owes you a commission!
Instantpot needs to send you a commission for every one of these machines sold 😁
Thank you for all your research - it looks like you had fun doing it!

Thank you so much! We thought it was very nice of that roadrunner to stop by!
All her videos are masterclass level!
Love the term Empty Nesters. So your are no longer Cash Dispensers. Enjoy your canning.

I had to stop right here and say thank you to you and Jim. I so appreciate the lesson you are giving and especially, taking the moment to share the road runner. Thank you.
I first saw the 41 minute video time and thought I’d never finish the video. Watched every minute. Thank you for your dedication and sharing your knowledge with us novice canners. Happy New Year!
Wow, thank you! Happy New Year to you as well.
So do you not recommend the Presto 02144 digital electric canner anymore ?
You outdid yourselves on this one. Thanks for the science and the skills to communicate it!

Your comment brought tears to my eyes. Every time you use it Im sure you will think of your Grandma.

Thank you so much. We do have a lot of fun together! So glad the Max is working out for you.

I’m in the same boat as you! New to canning and was going to get the nesco but when I emailed them regarding availability was informed they couldn’t even guess as to when they will have them. So this is a great alternative for me.
It’s 2023/Dec with the same issue. Just picked up this one. Hope you loved it. Did you only use pint size jars?

I can't wait to wow my friends with all this knowledge. I feel as if I just took a biology class. What a great video. I am new to canning. This was very helpful! 👍
Awesome! Thank you!
Wow--thank you, I really do appreciate that.
Priceless!
Congrats! Thanks for the very affirming comments. Jim
You are AMAZING!!!!! I don't know when I have enjoyed a presentation as much as I did your. I have always canned our garden veggies, but you answered a lot of questions that I have wondered about in recent days using an electric canner. Thanks for your time and effort in preparing this video for us. You are a resource I will keep for a long time.
thank you so much. I really appreciate your comments.
I've been canning at 8500' with the Instant Pot Max for 3 months. It consistently cans between 244-248°
I've discovered if you pack something really cold and dense that, if it drops below 240°, that it will abort.
That is good information about the aborting--another great safety feature. Your temperatures seem good, but for me, I would want to know the temperatures of the food in the jars to be certain. Mine never got above 247, so on the surface, your experience seems ok.
Can it do quart jars??

Bless your heart. I am thrilled with this tutorial. I have resisted getting an InstaPot because I feel like it is another appliance I don’t need since I already own a regular pressure cooker,(not for canning use), a rice cooker, which I rarely use, but my husband does, and two crockpots. That being said, I have never done pressure canning and
am now giving it serious thought, but my age, I’m a few years older than yourself), my semi-handicapped status, make me not very enthused about a big pressure canner.

Lower altitudes improve the results. As altitude increases, time and temperature need to increase.

Wow--you are making great progress!
Pam, what a revelation! Thank you so much for validating this in such great detail and making it easy for us to understand. Happy new year!
You are so welcome! And Happy New Year to you as well.
Oh my God! Thank you from Spain for your safe packaging master class. I followed his video with subtitles because I don't know English but I found out super well. At least the basics and most important to do my own research in Spanish. Without your video I wouldn't have known where to start. Thanks a million and a big hug!
Glad it was helpful! Thank you for watching from Spain! I am studying Spanish myself right now. I would like to become fluent.
Gostaria de entender tudo que Ela fala mais não entendo inglês
e só tenho essa opção, se fosse espanhol entenderia 😔 falo do Brasil.
I absolutely love how you explained everything in detail and made it so easy to understand. What a great informative video.
Glad it was helpful! Thank you.
Thank you!!
Texana: Wow, thank you! Jim
You’re a natural at teaching 😉
Thank you for this info.
SC: Thanks for the very kind comments. We are happy that your bread turned out so well. Jim
Never have seen a Road Runner except in cartoons, however, I enjoyed watching him on the balcony!
They are pretty fun to watch!
You are so welcome! Thank you for your kind words.
Ma’am! You are so amazing and dedicated to the research. I wanted to make bone broth and now thanks to you I can comfortably say I can now can some food on my instant pot. Thank you! Blessings to you and your family!
You are so welcome! Thanks for your kind comments.
@redrosehomestead GOD BLESS YOU!! Thank you so much for conducting this test! My sister generously bought me a Max and I was scared to use it for canning but this video and the one for Salsa gave me confidence to try canning!
I'm a newbie to canning so I'll be binge watching the rest of your videos this weekend. And I LOVED seeing your guest... the cute roadrunner! 🥰🥰🥰
Thank you! And congratulations on your new Max--what a wonderful sister you have! Hope you enjoy canning with it.
I love that you paused for the road runner! Excellent info. Thank you!
I’ve been researching pressure canning for a few weeks and TH-cam kept recommending your videos. I finally watched a few and I gotta say you rank right up there with Dolly Parton, you are a national treasure. ❤
