    I am so grateful to the French chef who came up with this amazing alternative back in 2014. It's such a game changer for anyone who is vegan or can't have eggs, or even dairy. I was so excited when I learned of this. Brilliant!

      cream puffs are my favorite! Since I have switched to non dairy, I have missed them so much. I'm definitely gonna try this whipped cream in some creampuffs!

      You can make FAKE whipped cream with chickpeas Whipped cream is self explanatory .

      @@thebitchinthecorner2252 Creaming something is a method. He is "creaming" the aquafaba, thus it becomes "creamed aquafaba". That's why we have creamed corn, coconut cream oh and face cream. Nothing fake about it at all.

      Sam Murray it says in the title make whipped cream from chickpeas. Whipped cream is literally cream that has been whipped no chickpeas are involved in that. If it says make a whipped cream substitute with chickpeas then I would not have a problem. Just don't say it's the real thing.

    Canned chickpea liquid works just fine. And adding a touch of vanilla extract makes it much better for desserts. The powdered sugar is a requirement for a smooth texture. Regular sugar makes it grainy

    I’ve tried this idea to substitute whipped egg whites during my pregnancy and it worked great! I used the water from canned chickpeas and it was perfect.

      I always have chic peas in the freezer. However , water from canned chic peas is usually salinated. Do you add powdered sugar in the process? Thank You.

    Tried it today and I couldn't believe it - it worked. My hubby pressure cooks chick peas all the time. He did not follow your instructions on how may hours to soak or how many whistles to wait. I checked if the liquid looked like what you've shown in the video when it cooled down. Expected the outcome to be creamy in colour. Nope, it was pure white, fluffy and airy as you said. Thanks for the video Yaman. We enjoyed it with Wine biscuits.

    I just made mine and wow... it came out great! I was scared it might not whip well because mine wasn’t as thick and egg-white-like as yours even after days of being refrigerated but boy, did it whip! To think I’d only set out to find chickpea recipes and stumbled upon this, I am so glad. Thanks for sharing!

      clear mist.... She didn't say she didn't like it. She said she couldn't tolerate it... Meaning that her stomach can't digest it properly, which causes discomfort and cramping.

      @Jenn, yeah, but the flavor is not gonna be the same. I'm assuming she likes the dairy, but just can't drink or eat it. Maybe she can slowly try introducing the diet, although it depends on what her exact conditioning is, although I've heard it's possible for someone who is intolerant to gain tolerance if they slowly build up to it.
      That being said, this videos is an interesting trick for those who can't take the dairy whipped cream. Thanks for clarifying the comment, though.

    Basically know that all legume water is aqua faba, but was not sure all would whip as the water from chickpea? Tried water from a can of sweet corn, utterly delicious! And the slight sweet corn taste lends itself so well to the final whipped stage. Thought the water from stronger legumes, kidney beans, butter beans etc would smell and taste horrid, but utterly no recognition of where the aqua faba came from. Nature is amazing! Very nice videos by the way!

    I've searched dozens of recipes for making whipped cream with aquafaba and they were all horrible. THIS ONE IS THE BEST! Great instructions the whipping cream turned out perfectly. THANK YOU! Someone finally got it right.

    Awesome recipe. I tried it with a variant, I beat just aquafaba with Hamilton Beach 6 speed burst (hand mixer), starting with speed2 and then 4 then speed 6 for 2 mins each and cream was ready. Then I added 3 tbsp of Stevia and whipped it more from statring at speed 6,going to 4 and then to 2 for 1.5 mins each. Great thing, overwhipping doesn't ruin anything. Because of Stevia, taste is very mildly pungent but you wont notice the difference.
    I always look for healthy recipes as I am a big foodie and love to cook, bake and serve. I love feeding people. And my girl is all about Frosting she just eats creams n frosting. Can't be happier to try this one. Blessings and lots of Appreciation for your effort and sharing. You are very talented as well as cute!!!! I have been looking your videos for an year now and you are awesome.

    I watched this a long time ago and had forgotten just how amazing this vlog is. Not just for the vegan whipped cream but also the tips about freezing the aquafaba and how you make it in the first place. I just save the water from a can of chickpeas but there is no doubt that chickpeas are much more tasty when soaked and cooked fro dry. I just never kept the water.

    I want to thank you so much ! Your method is the only one I saw on TH-cam and I've been looking a lot ! I think it is not only efficient, but time saving and energie saving. Your method allows to use the aquafaba after only the beans are cooked. Other methods force you to use much water and then reduce the "juice" afterwards and then have it cool it over and over.
    Ever since I've used you method I succeeded to "white" the juice at the first try. And you also gave me the idea to freeze the big quantity of beans which makes me save time everytime I fix meal. I wonder why I did not think of it sooner !
    Finally, with your method of cooking the beans, I was able to make aquafaba not only from chick peas like everyone does on the net, but also from green lentils and red beans !!!! I keep surprising my entourage with this, always a success. Plus we have never eaten Chocolate Mousse at home ! :D
    I just have to try meringues now ;)
    Thank you again and definitely the best method ! I recommand it !

    Ive used it to.make frozen treats just adding bit of cream.of tarter some powdered organic sugar n natural flavoring
    N froze it
    It didnt collapse
    It was like a frozen cloud
    Im soaking beans now for this weekend im going to need salt free aqua faba to make my treat im making a 3 layer bombe
    Rasberry
    Chocolate
    pistachio
    It will will blow my company away and its fat free low cal but has calcium n minerals from the aqua faba
    Its crazy fun amazing

      @oldHarmony Either lemon or lime with raspberry are really tasty combinations. I'd used lemon before but had never even thought of lime and raspberry together until a friend of mine, who's an incredibly good cook, made a vegan cheesecake with the two. It knocked my socks off as, if asked, I'd have thought the two wouldn't go together.

      I prefer hznd mixer than my kitchen aid as the kitchen aid tends to not scoop it all up from the bottom... with the hand mixer you can ensure the beaters will catch all the aquafaber up from the bottom.

      Try it an let us know. Place some in the fridge and some in the freezer. Check every day until the texture, appearance, or smell let's you know it is no longer so good.

      The pressure cooker just makes it quicker. I cook my chickpeas in a terracotta pot on the fireplace. Just don't add too much water!

      Christopher b So you can get the same consistency of aquqfaba if they're cooked in a stainless steel pot on a stove? I've only seen a much thinner consistency in the can, and when I cooked my own, (years before aquqfaba was a known magic worker) it was always thinner than this. I know bean water gets thicker with longer cooking, or less water, but will it get this thick? Thanks so much! As a vegan, I'd love to try it from scratch like this.

    Taste wise, this is a lot closer to beaten egg white than to whipped cream.
    Also, I'd add a tablespoon of lemon juice or carob gum. The acid will help a lot to firm it up.
    A bit of vanilla rounds it up in my opinion.

    A little tip: to achieve stiff peaks, u can add a pinch of cream of tartar/nimbu ka phool/tartaric acid... with the sugar.......

      I used to say never also but a friend getting his second stent and my own experience with side effects of BP meds led me to research the evidence for a plant based diet. I switched two years ago - much healthier and no more cholesterol or blood pressure meds.

    Wonderful recipe and demonstration. I don't use a pressure cooker, can I just cook the chick peas? Milk is a cruel business, how the farmers force the cow to be pregnant, in order to get the milk. We are quitting milk products since we found this out, so THANK YOU FOR A KIND ALTERNATIVE TO MILK PRODUCTS!!!

      Yes you can use the slow cooking method. Just cover the vessel well. Alternatively you can use liquid from canned Chickpeas as well

    I will be using a can of Chickpeas
    but I too was blown away learning that liquid from canned Chickpeas once whipped can be used in place of heavy whipping cream.
    A good tip for freezing the liquid in ice trays for future use.

      Melanie Darville yess sadly it did, but i brought it back to life by adding cream of coconut. stayed nice and airy. if you want a thicker consistency, you could even add some vegetable shortening or butter, which is what ive done to use for frostings. just needed some fat to bind to!

      Update: the recipe was of really good consistency and was extremely smooth. I tasted a bit of chickpea but I balanced it out with a bit more powder sugar. Overall, this is one of the best recipes for plant-based whipped cream and I will be using this for my future homemade pastries. Thank you so much Yaman.
