This video came up in my recommendations when I was looking for meatloaf recipes. I made this last night. I am not vegan, and I'm not going to go vegan, but I have to say, this was SPECTACULAR. I used a wild rice blend + brown rice instead of the black rice (which I couldn't find), and I cut the peppers as small as everything else (1/4"), but otherwise I followed the recipe...and it is so good! It's quite substantial, so one piece is enough for a meal. It's not trying to be meatloaf, so the texture is different, but it's quite lovely. I'm definitely making this again.

That looks AMAZING! Want that glaze on some roasted potatoes, sweet potato and butternut. With some pepita dukkah that's a great autumn dish. And meatloaf sandwiches kick @ss. Wonder bread, mayo, black pepper and meatloaf is total nostalgia.

This looks so tasty, I‘m going to try it! I‘m not 100% plant-based yet, but getting there. Black beans have been a staple in my meat substitution. They work really chopped up with taco seasoning in tacos or burritos instead of ground beef.
I’m a huge meatloaf fan but they always sat heavy on my gut. I’m definitely trying your version. I made sloppy joes with lentils and while It was good I don’t think I’ll do that again. What I’d like to know is does your version make a good meatloaf sandwich the next day? I love a day after meatloaf sandwich with cheese and Mayo.

I made this. Bravo! The sauce is so good. And using refrigerated leftovers in a sandwich with mustard and romaine is amazing.
