To prepare dried mushrooms: 0:59 Mushroom stems are removed when dry. 1:24 On the day before cooking, place dried mushrooms in a bowl with water, soak for 5mins. 1:51 Rub mushrooms gently. 2:21 Drain. Replace with clean water. 2:33 Add potato starch, gently rub and let mushrooms swoosh in water mixture for 1min. 3:28 Drain, replace with clean water, rinse, repeat until water is not cloudy and mushrooms are not slimy to touch. 3:46 Fill with 3 times the water than the mushrooms. 4:34 Put some weight on top of the mushrooms to assure all are submerged in water. Cover. Store in a refrigerator for at least 8hrs. 4:55 On the next day, mushrooms are soaked well and ready for cooking. 14@ Dried black shiitake mushrooms, small 1head Lettuce, small 200ml/7oz Chicken fat with broth 1tbsp oil 1tsp Shao Hsing wine 1tsp Sugar 1tbsp Oyster sauce Gravy: 200ml/7oz Chicken broth 1tbsp Oyster sauce 2tsp Cornstarch mixed with 2tbsp of water Dash of dark soy sauce for colour 1. 6:45 Rinse lettuce, peel, then soak in water for 30mins. 2. 7:11~7:48 Heat 1tbsp oil, add mushrooms, stir fry for 1min, add 1tsp Shao Hsing wine. Add chicken fat with broth. Bring to a boil. 3. 7:52 Add 1tsp sugar, 1tbsp oyster sauce, blend well into the broth. Turn to low heat, braise for 10mins with lid covered. 4. 8:53 Mushrooms are done when little broth is left. 4a. Stop here to store away for later use. Let cool to room temperature before storing in a freezer. 4b. Lay mushrooms upside down on a deep dish. 5. 9:35 Bring water to a boil. Add a small amount of oil, salt, and sugar. Blanch lettuce for 1min. Drain. 6. 10:01 Place lettuce evenly on top of the mushrooms. 7. 10:26 Using a bigger size serving plate, cover the dish, hold on tight, quickly turn dish upside down. 8. 10:38 Remove the dish on top. Voila! 9. 10:53 Heat 200ml/7oz chicken broth. Add 1tbsp oyster sauce. When it comes to a boil, slowly add cornstarch mix while stirring quickly until gravy is bubbling. Add dark soy sauce for a nice color. Dress on top of the mushrooms.
