    Love that it's about 50% less sweet than sugar. American recipes tend to be way too sweet for my pallet.

    Hi. You mentioned you are going to make meringues with Isomalt, where may I find your video please. Desperately looking for a recipe using isomalt for meringues as it has low glycemic index and would benefit my grandmother and grandfather who are diabetics and have a sweet tooth. We have a dessert in the Philippines that uses French Dacquoise and we call it San Rival. For years I have been looking for a sugar substitute that would be similar to sugar in structure. Been looking for your meringue with isomalt but could not find it.

      Hi! I've replied to your other comment on that already. But now that I read this one, I understand that you just want to make sweet meringues, only with Isomalt (not savoury). In that case, just go ahead and substitute sugar in regular meringues recipe to Isomalt, 1 to 1. It'll work exactly the same. The end result will be half as sweet though. Also, if your parents have health conditions, first consult with a doctor or registered dietician, before you test new recipes on them. Good luck!

      @@ChefRudakova Thank You very much with gratitude for your reply/response. I am looking forward to your meringue video. I have searched and searched the web/internet for recipes using Isomalt for diabetics due to family. We are genetically pre-disposed if not at an early age already have diabetes. I believe this is a global health issue, diabetes. I have tried so many times and just end up frustrated using sugar alcohols such as erythritrol, monkfruit, stevia, allulose to make cakes for birthdays but have not been successful because these sugar alternatives do act in the same way as sugar in baking. Correct me please if I am wrong but in my years of researching the internet only Isomalt acts the same way as sugar in baking. I come from a province/region in my country where our whole Island produces Sugar as we have sugarcane plantations all over and everyone is a sweet tooth and even if they are not genetically predisposed to diabetes eventually the do get it. The is an alternative which is the keto diet with a lot of recipes on the internet but Keto is a high-fat diet and can be dangerous as I have read Harvard Health, Mayo Clinic and other websites on Keto, it is not for all and like a lot diets, it is driven by fad. Famous people do it and the rest follows then comes to an end as like all diets in the past like the Atkins diet. For diabetics, we need low carb, low fat, no sugar thus my joy and hope when I saw this video of yours regarding Isomalt. Thank you for your advice on seeing a doctor and dietician, All sugar substitutes have side-effects, we buy Pilsbury Sugar-Free Devils Food Cake Pre-mix and we get bloating, gas and if eaten too much diarrhea is the side-effect and there are a number of sugar free pre-mix but we long for food that is native to us. This is long, my apologies. I am grateful for your response and have hit the notification bell and praying for your isomalt meringue recipe soon. All the best.

    Hi! I'm wondering. Is it possible to use isomalt for preparing italian meringue as basis for french macaroons? Dose it make any seanse? Or is adding sugar the only way to obtain the correct form macarons (with the feet)?

      That’s an excellent question! 🤓 Isomalt has the same properties as sugar, so you can freely substitute it. Just make sure to blend it thoroughly (if icing sugar is used in the original recipe)✌🏻 Let me know, if you are going to experiment with it!

    Isomalt has a very strong laxative effect similar to most other sugar alcohols... worth mentioning! consuming more than 5g for most people is not advisable.
