      I learned to make them from my ex-mother in law. She made them for my son when he was little and he always wanted them if he was sick. He called them "dunkin' eggs" because I'd cut the toast into strips and he'd dip it in the yolk. Poached eggs seem to have a long history of making sick children feel better. 😄

I never could figure out how she was able to place our breakfast on the table and everything still warm. She had some magic like all Mama's do.

    Great job, Kent - AS USUAL! I won't pretend to possess your cooking skill or acumen, but I am a pretty decent poached egg cook, and I LOVE your methods! The only alternative I would suggest is to use a ladle to poach when you've got several eggs to cook in a small amount of time. Crack the egg into the ladle, and submerge in the water. Hold for 15 seconds just to get the egg to hold its shape, dump it slowly, then do the same with 2-3 more eggs. I've poached as many as 5 eggs at the same time this way. One trick is to add a couple dashes of hot sauce into the ladle before cracking the egg into it. Try it!

    • @kimlalajo
      @kimlalajo 2 ปีที่แล้ว +11

      Wow thank you! I will try your method. I have never been able to use the swirl method. I just end up with a tornado of shredded egg whites. lol. Same with dipping method. Just a jumbled mess of egg white spread all over the water. I appreciate you sharing this wonderful tip. I will try it tonight!🥰

      @@kimlalajo Thank you! Did you get to try it? Like you, the swirl method just never worked for me. Same - I just had 20 pieces of egg floating around in the water, LOL. Using a ladle was the ticket for me, because mine is the right size and shape, and until you get the hang of it you literally can poach the egg in the ladle. You may want to use a hot pad or glove because the steam can get a little hot, but it DOES work! Let me know how it goes.

    • @kimlalajo
      @kimlalajo 2 ปีที่แล้ว +2

      @@jakemitchell1671 Yes I did! It worked perfectly! Thank you so much for the tip. It was the best poached egg I've made. My ladle is also the perfect size, so it worked out so well. It went great with the food we had made this weekend, too. I will use this method from now on!

    This is how the chief cook on one the ships I worked on made poached eggs also. Most people just wanted scrambled or an omelet but one guy liked poached eggs and the chief cook knew how to do it and was thankful a lot of people didn't ask for it because it took longer to poach an egg than make a batch of scrambled or omelets ahead of time and there wasn't much time for breakfast before you had to go to work. The first 30 minutes were for people getting ready to go to work and the last 30 minutes were for the ones getting off the night shift or 04-08 watch. 🍳🥓☕😋

    Love you showing more than one way to cook a meal.
    I cook the tornado style, yes from the Midwest, in a sauce pan, put 3 eggs in at a time and stir until done. The constant circular stir makes all 3 eggs perfectly round. I put on well butter toast after drying off. If feeling extra nice I'll make some hollandaise sauce. Yummy, now I got to go make some.

      You are missing out on an egg treat! Poached is the way my wife prefers her eggs. I'll have my eggs, scrambled, soft basted, or soft over easy, or hard boiled if I'm too lazy to cook in the morning and I have some hard boiled eggs in the refer. My feet are on the floor 1-1/2 hours before she get up, so I'm done cooking except for our 2 cocker spaniel taster/tester, who dutifully sample everything I prepare to be sure nothing has been poisened! I haven't done poached eggs anytime recently, mostly because I've not had a good method. I'm going to work with this because I really want "breakfast for dinner"! Soft poach eggs atop some pancakes with maple syrup, butter, easy salt & pepper, and some bacon,,,,,,"That's some fine dinein'"! I've had this in the past, but i've never done the poached eggs myself. Something new to work on here!

And to really kick it up, add a nice sausage patty or a nice piece of ham. Coat with some Original Seasoning and the day is perfect. Oh, don’t forget the red potato home fries as well! Now we’re eatin’! Thanks.

    My grandmother, born in 1919 and the mother of 19 children, made lots of poached eggs. She would take a coffee or teacup and she'd dip out a little of the hot water and crack the egg into it. She'd then wait a short spell and then slide it into the water. Having that hot water in the cup started the process of setting the egg white and helped keep the egg together in the pan. She also made homemade bread that we'd toast and use real butter. A breakfast fit for a king!

      @@MakBot He's incorrect. Adding salt or vinegar to fresh water forms a solution that is denser (higher mass) than fresh water of equal volume. The added density adds a kind of pressure to the egg and aids in keeping it together rather than have it become more diffuse. I've done it both ways and it comes out better with increasing the density of the water, especially combined with the "whirlpool" trick.

    Crack the egg into a ladle in the pot of hot water. Way I've done it for 20 years works amazing

    The thing that I learned to cook from an outdoors program in the southwest US was: plain cake in a dutch oven with canned peaches.
    I started doing something similar with a corn batter and egg. I want to know if there are other Tex-Mex recipes like I have concocted, a savory cake with whole pieces of fruit baked in. It was a good way to use alternate flour with eggs.

    Poached eggs were dad's favorite, served on a lightly toasted and buttered slice of bread. Mom used to use a large cast iron fry pan filled halfway with water.

    I have recently discovered the soft-boiled egg. I love serving it between lukewarm and hot. 2 pieces of whole wheat toast, piece of sausage or some bacon, glass of OJ. OH MAN, I'm hungry now!
