Mr. Rollins I had the tremendous pleasure of meeting you downrange at Ft. Carson CO back in 2003. Everyone, Kent is genuine just as you see him. He was kind enough to give me the leftover cherry peach cobbler when he put away the food. He is an amazing cook and it was an experience to stand right there see his wagon and how he prepared our meal. I just retired from that Fire Dept and I tip my helmet to you sir. May the Lord above continue to richly bless you.

I found out my roommate had a cast iron pan that her grandmother used to cook with. I begged her to let me use it and since then a lot of my cooking has become house favorites thanks to what I learned from Kent.
Very similar to how my grandma taught me for the scramble, it absolutely makes a difference if you give just a little bit of love and care to those eggs. I do like some chives and a little dash of a good hot sauce in there, but that's personal taste. One thing I think is good to point out is to take the scramble off the heat when it still seems to loose, the heat from the skillet will keep cooking it and it even cooks on the plate until the temperature drops, so if you keep it on the heat until it looks perfect, it'll be dry by the time you eat it. Thanks a lot for the video!
He gets me every time. Eggs for dinner. There's just something about the way he makes food look so dang delicious that I run out and get the ingredients and try it right away. Thanks to Kent and Shannon I've completely changed up the usual dishes we go through every month. My husband thanks you Kent LOL. He says he owes you a steak dinner next time you both get to Houston. You've given him back so many dishes his grandmother used to make. She ran the only restaurant in Cedar Vale, Kansas and you're bringing back all of those dishes that he would eat when he got in from basketball or football. He'd sit down at the counter and his Gram would fill him up because he was a growing kid and was starving after school. His divorced Mom was an EMT and worked double shifts so Gram Slaughter filled the bill. Thanks Kent and Shannon. Hope you're both doing great.

Learned though necessity: I was out of cream on Saturday morning & had promised breakfast to my wife & daughter. I didn't want to run to the grocery store. I looked in the fridge & noticed I had sour cream. I thought, I would give it a try. I added about 3 tablespoons for 8 eggs. I used an emulsion (stick) blender & whipped them up. They were amazing. To this day it is the only way I make my scrambled eggs or omelet batter. I attribute it to a combination of the enzymes in the sour cream & the air incorporated by the emulsion blender. Give it a try, you will be amazed

That's how I like 'em! Heat management is the key. Too many restaurants cook scrambled eggs/omelettes that are scorched brown on the outside, and either overcooked or uncooked on the inside. Their skillet is too hot. Yours was just right. Great video as always, thanks and take care.

I watched an episode of America's Test Kitchen (TM) and the woman, who was an experienced pastry chef, advised that 88 stokes of the whisk or fork will break down the protein strands giving you the best scrambled eggs. I've tried it and have continued to use it oh these many years. It works!

I’m glad I found Mr Kent Rollins a while back on here. Watching you cook reminds me of when I was little and getting to watch my dad or grandpa cook. If everyone could just gather around and enjoy life and cooking as much as you do, this country would be in a great place.
Your scrambled eggs are pretty much the way I usually make mine. Lately though I've had some leftover mascarpone cheese after making tiramisu. Added a tablespoon or so of that in. It works very well!

Love watching and listening to Mr. Kent... when i add stuff to my eggs I usually had those ingredients, let them cook for a few, then add the mixed eggs
That water trick works like a charm. The bubbling from the water is gentle enough not to break the egg but just enough agitation to free them up. I love my cast iron skillet now that I can cook it in well.
Mr Rollins, I the "man" of the house, mostly cook the food my wife and I eat. We try one of your recipes each week or two (depending on time available ) And we enjoy your enthusiasm displayed on every one of your shows. Last weekend we tried your Grilled Tuna Melt and was fantastic. Easy ideas and goodness in every bite. We live in Canada but seems like your like a brother in law ! Thank you so much and hope you keep the channel alive and well for a long time. That is a beautiful piece of cast iron. I've been using my cast iron pans for about a year now, and they're getting more shiny, but I don't know if I'll ever see my pans look that good. Guess I'll check back in a decade. ;) I love using them. They've become very black, no longer the matte gray they started as. Sticking isn't an issue, but when sticking does happen, it's no biggy. I just polymerize some more layers to cover the stripped parts and continue going about my day.

Hot dog, I didn't know that trick. :o I've been making egg only omelettes just to get by, but never explored THAT far in cooking. This makes me feel like a giant in a hobbit hole trying to whip up foamy cheese, so to speak. Boy I feel basic, but that don't mean I won't learn more. Cooking has NO limits, and can't wait to see the next dish next week.
P.S. This was uploaded on my dad's birthday today, and can't wait to try after today to cook this for him as a post birthday breakfast. Keep on sizzling, I'm not going anywhere friend. 😁

Made this into a cowboy cast iron breakfast casserole. My whole family loves it and Red River Ranch seasoning. Wish I could show a before and after photo here.
I have just rediscovered the practicality of cast iron. I bought a 12 inch pan at a thrift store and reseasoned it. I just made a frittata with broccoli, pork and onions and it turned out great. Pretty minimal clean up afterwards, but you need to pay attention to what you are doing. Thanks for the tips!
Made these scrambled eggs this morning but did not have Mayonnaise nor heavy cream. Soooo I substituted them for Kraft Miracle Whip and Half and Half coffee cream. Still turned out delicious. And , yes, we cooked them in a well seasoned, 80 yr. old cast iron skillet.Keep Kookin Kent.
I don’t know much about Cowboy Kent Rollins but I do know this: if he prefers Duke’s Mayo and not that evil miracle whip, he’s A-Ok in my book.

We made these scrambled eggs for breakfast and they are first class. Moist and fluffy and the Duke’s gives it a really nice flavor.

This is the first time I have viewed Cowboy Kent Rollins. I definitely will be signing up for his emails. Living in Houston, Cowboy Kent so reminds me of Dr. Red Duke back in the day. Both of these men use(d) language (whether it be cooking or medical) you could understand and follow along. Looking forward to all those southern recipes to come.

My mother, God Bless Her, made sure that all the boys ini our family knew how to cook - and cook well. We used cast iron a whole lot. When I left home, she gave me two things: A WagnerWare cast-iron skillet, and a dictionary. Well, that was over 50 years ago, and I'm still using the same cast iron pan practically every day, plus a Dutch Oven and a couple of smaller cast-iron pans. The dictionary came in handy too - back in the days before the Internet, there were a lot of local and regional newspapers in western Canada, and they almost all had a cooking column. I had developed some good recipes, so I started writing them up and - to my amazement - the papers bought the articles. So, that worked out pretty well. I've spent a lot of time cooking in the back country, both for one or two people, or groups. I wouldn't be without my cast iron pans. Thanks for all of your great videos, Kent. Jim B.
I used this recipe to make a breakfast casserole in a 17 inch cast iron skillet. I used Kent’s technique for crispy hashbrowns to make a crust, blended my meat with bell pepper, onions, and Kent’s Red River Ranch Seasoning. Made the eggs just like he did. Cooked it for about 30 mins, topped with more hashbrowns and cheese. My family loved it. My wife had given me a little bit of heck for buying seasoning that I saw on TH-cam but in the end she, the kids, and the inlaws were believers.

Kent, thank you. I showed this video to every one of my relatives. They all overcook scrambled eggs until they are like hard rubber. Good hearted, but they don't think...they just repeat mistakes made for generations.
It also looks like you have vintage CI. I prefer those for eggs vs the heavier rougher modern stuff.

Neighbors came over right on the middle of me trying this recipe yesterday - I ended up burning them and giving up on it. I’ve been watching for quite a while.. a year or so.. it prompted me to get a cast iron pan.. I’m going to get a few more.. different sizes.. it’s amazing how much better everything cooks and tastes in a properly seasoned pan… and these recipes are amazing..

This scrambled eggs recipe really upped my game on making the scrambleds myself. I just followed what Kent put and my eggs ended up nice and really fluffy and delicious. Heck my wife loved them too. This is my go-to recipe now. Thanks, Cowboy! :)
I gave them a try and they are the best I’ve ever tasted! I didn’t have any of your spice mixture so I used a few pinches of Herbs de Province. Absolutely delicious!
