My grandma in Apache, Oklahoma always said to crack eggs on a flat surface because the shell stays more intact and you don't get the little bits of shell you get from cracking on an edge. Of course she also said if you do get some shell you can just keep that news to yourself! I sure do miss her!

My mom always called it "egg in a nest." This video caused warm wonderful feelings to flood back. When I started making egg in a nest for my family, I would add fried bologna or smoked breakfast ham and cheese, but it never occurred to me to use sausage. That will be the next breakfast I make!! Wow! Never thought of this at all. I have oatmeal molasses bread I made up yesterday. I'm short on sausage though. The hogs are starting to look a little suspicious about now. I suppose I could chop up some ham and give it a touch of sage. It should work fine with enough cheese. Thank you as always.

I grew up on my Mom's
EGG & ONION SANDWICH (created in the Depression days!!!)
To "glorify" this breakfast sandwich - add green onions, CHEESE & top with sausage pattie or burger!
Start by browning buttered bread, add more butter & onions - slices left in rings.
Beat 2 or 3 eggs & pour over onions, add S & P & green onions. Flip it to brown the other side - then add the cheese & melt it.
Cut egg pattie to fit bread & pile the rest of the egg on the bread too. Add browned sausage pattie &
top it with the other toast.
Add ketchup!!! YUM😋!!!

Ooo... Make sure the egg yolk does not break, so it will drool all over once you bite into the sandwich. Always pre-butter your bread before putting them into the skillet. Use bacon lard instead of butter on the sausage. Cook the middle of the bread as biscuits with butter for a side, instead of putting them back in. Mmm...delicious.

Cinnamon Raisin Bagel; with Spicy italian sausage, Bacon, Egg and American cheese! Nothing compared to this one but SOOOO GOOD too!
Yet another great video to add to my recipe playlist! I make a toasted bagel with fried egg, back bacon and cheese but this looks alot more tasty and filling. Will have to find a similar type of sausage here in Canada though. Lou's Back Bacon is what to look for in Canada for those interested. Btw, any dog as tall as Cletus can and will counter surf or perform air strikes on a bbq:)

Awesome! I have been doing this for years, with sausage, ham or bacon. The only difference is that I scramble the eggs in a bowl first, then after the bread is toasted for a few minutes each side, I dip the bread in the eggs French toast style, then back to the griddle. Then I pour the remainder of the scrambled eggs in the hole. The result is a eggy crispiness that can't be beat. Great video Kent!
Kent, that looks delicious it is almost the perfect breakfast sandwich. However, it is missing three key ingredients, Bacon, Ham, and Scrapple. With the addition of these three ingredients, it will become the perfect breakfast sandwich.
I love my cheese, and I'm crazy about breakfast sausage, especially if it's peppery hot. I also get my eggs fresh from my next-door neighbors, who have 13 beautiful chickens and a feisty rooster. I'm thanking God for people like you and Shannon. I've been enjoying every friendly video of yours that I've seen, I appreciate the hugs, and I drool over every dish you create!

When I was a kid (age 7 in Canada), my first meal I cooked was eggs in a nest (egg in a hole). It was just egg and bread. As we get older we keep improving our dishes.

Hey CK, I am a fan of Kerry Gold butter just as you are. No doubt, it's a fine butter. Recently though, my local Walmart has a new butter on the shelf that is as good, and dare I say, better than the KG. It's the Vermont Creamery brand. They have three versions of it. I've only tried the version with the sea salt but I have to say, it's really nice. American made and less expensive. Give it a try.

These sammiches are great, I made them last weekend with heavy bacon. Problem is, they are a meal for a day, unless you are working hard that sammich is good to about 2 PM from 7. I used a little Duke's Mayo on the bread to brown them on the skillet, really get a great color and crispness. This is an A+ breakfast sammich for from you for sure.

Kent, I had a thought as you were cutting out the rectangles in the bread. If you turn them 90 degrees in orientation and offset them to either side a little, you will get egg in every bite. From the top slice on the first half, and then the bottom slice on the second half of the sandwich.

I make something similar but without the egg in the hole trick, I like to use sourdough and sausage but if that's not available I use scrapple instead and use Spanish onion slightly cooked so it stays crunchy.
Yes have to have that cheese, Cooper Sharp white here or shredded cheddar.

My favorite breakfast sammich is sausage egg cheese on toast with grape jelly, don't knock it til you try it! Also, the crispy cheese part Shan likes is called frico. TFS, we love toad in the hole in our house!

Try this: Cook the sausage then remove. Lay down cheese and let it fry for 30-60 seconds. This is called 'freco', then remove. Then cook the bread/eggs and layer it like a burger/sandwich. Less mess & cleanup. Oh - a dash of cayenne to leave a little heat after you chew is nice.
That makes a darn good 'messy' Breakfast Sandwich!!!
