I just think it's amazing how dedicated you are to reducing your food budget and save money. A lot of people don't realize how much money you can save, and you are eating healthy. It's been really motivating to see!
Thanks so much for making these videos. My wife and I are digging ourselves out of a lot of debt as best we can. These frugal eating ideas have helped a lot.
I love your simplicity of your meals and that they are vegan. I use to have the common misconception that it was more expensive but by watching your videos I realize how wrong that was! You just have to be creative 🙂

I of course want to make so many other's recipes, but I'd have to really spend so much more money than we have. So thank you so much for being you, you're incredible!
I have been on a huge soup kind since about September and it’s not even cold cold here! Today it was 72 and I was so excited to warm up my soup!! Glad you loved the recipes! Happy cooking!
I’m so glad you find them helpful!! I really enjoy sharing these types of videos because this is how we’re eating and it’s making a big difference for our budget!
The soup looks awesome. Just a little tip for you is mix the corn starch with cold liquid first then heat. It will blend better. Flour blends better with warm liquid. 👍
Great video. Since going WFPB our grocery bill reduced by at least a third and no more wasting food. Also no more take outs or eating out which I don’t miss at all.
I make a big batch of vegetable soup every week. The flavors always depend on what is on sale and what I can find. It's just the easiest thing I can do to guarantee I get enough vegetables and to make sure I am full with my lunch and dinners and don't over eat my starches. I am definitely going to try your soup recipe. It looks delicious.
Hi Miranda, love your videos, you have given me a lot of good meal ideas, I made your bread recipe last night cooked it this morning, but I used buckwheat flour and gram flour as I'm gluten free, turned out fluffy amazing loaf. Thank you. Keep the video comming.💖

I am so excited that I found your channel! I’m about to transition to a plant based diet on a budget. Your videos are perfect for what I need! Thank you for sharing your journey!!
I'm new to your channel and also a new vegan. I'm getting a lot of great ideas! Your orange sauce was interesting. If I may suggest, don't boil the orange carcasses with the sauce if you don't want the bitterness. Just use the zest.
Loving your videos all the way from the UK. High starch low fat diet journey. Really enjoy your content and you keep things so easy and simple, love it :)
I love love love your channel! I have been following 4 of you guys that do starch solution inspired meals and you are the one I seem to just love the most. Don't ever change or complicate things...sometimes less is so much more. You inspire me to try to eat better and work on lowering our food budget as well. 🤗
Thank you so much! The budget videos are my favorite because they’re dear to my heart since it’s the journey we are walking out right now! I hope just to showcase easy inexpensive meals anyone can make!
Thanks for sharing your recipe ideas. I make a Moroccan soup with lentils and chickpeas (celery, carrots, onions, and tomatoes) but it is better with cumin and a pinch of cinnamon.
Your the BEST!!!! Your videos have changed my life and finances cuz I'm not spending hundreds on eating vegan anymore! Praying good things your way always 🙏
Congratulations on 15k...You deserve it girl. Everything looked delicious. I've always thought eating healthy was expensive & I just can't afford it but you've shown me how to do it so that it doesn't have to be. I want to get healthier & lose weight . Another fabulous video! Thanks so much for sharing your ideas 💞 and congratulations on hitting the 15k. Hopefully I can change the brown lentils and use up that mountain of red lentils in my pantry 😂 I'll go from looking like a sweet potato to a red lentil!
I love these meals this week I'm definitely gonna make the lentil soup and the burritos but I'm gonna turn them into enchiladas with the potato cheese sauce. Thank you.
If you want seasoning but need to save. Splurging on a single big mixed seasoning like Kirkland no salt seasoning, lawyers salt, or mrs dash original. It is versatile and cheap per serving
That’s a great idea!! I don’t have a Costco membership as I don’t want to pay for one to buy bulk but I know many stores sell bulk spices now too!! At least out Winco foods does!
Another great video. Everything looks delicious. I like shopping two weeks sometimes instead of weekly. I feel like I get more variety in my meals. Especially if it's a week that has great sale prices. This works great for me since I'm single. I do make meals and freeze half of them for the second week. Sometimes depending on what I'm making I can stretch some of the food into the third week. Making your own salsa is a great idea. The 99 cent store has dry Chilis I keep on hand to boil to make my own salsa and enchilada sauce. I save a bunch of money by doing this. Sometimes I used diced tomatoes if I find them for 50 cents a can. Looking forward to your next video. Stay safe!
Oh the chilli idea is wonderful! I probably would shop a few weeks in advance if I didn’t share ideas on TH-cam because you’re right you can get a bit more variety for even a few extra dollars!!
@@flourishingmiranda I completely agree. I am sure you have a lot of viewers so I try to comment something that i do that might help someone else. (I hope you don't mind). I get a bag of chilis and it will last awhile. Some of the 99 cent stores have them but the are usually under $2 and go pretty far. I have about 3 different kinds I keep in my cabinet. It's a great item to have on hand IMO.
Good morning, Miranda! I love the idea of making my own salsa. I never knew it could be done without lots of tomatoes ( which are 2.99 lb right now!), and so many expensive fresh ingredients. I have everything in my pantry to make this! Thank you for these simple, yet flavorful meal prep ideas. I am going to make your first soup tomorrow😊. Btw- where did you get your jacket? My jacket zipper finally decided to break completely after nursing it along for 2 years. The green color is beautiful!☺
This jacket is so old I think it’s 5 maybe ish years and it’s from H&M! And yes! I love salsa and typically it’s not super expensive but I thought I’d give my hand at making my own and it was less than $1 to make a HUGE batch! Plus you can throw anything into it- corn, black beans, pineapple-- anything would be good!
I’m obsessed with your videos girlfriend 😍😂🙏🏽🙏🏽🙏🏽 thanks so much!! I’d love to see a budgeting or finance for dummies (like me) from you one day soon. I don’t track my spending very well and could use some tips. I trust your judgment!
We are planning to do a very quick helpful tips video this weekend! I think it will be so so so helpful as we are not pros either and sometimes hearing how others do things can get us thinking to how to create a path for our own finances!
Great ideas! I'm wondering if the bitterness in the orange sauce came from boiling the rind. The pith is what is bitter. Maybe just the juice and some zest in the water with a bit of coen starch to thicken would work well.
Hi Miranda! Greeting from a potential 2-day MN snowstorm ☃️ I finally made that no-knead bread and needless to say (omg terrible pun 😂) my teens LOVE it! I made the wheat one 1.5 c. light wheat & 1.5 c. white flour & it’s TDF: To Die For 😎😎😎 the sweet potato chili soup has lasted me for lunches (and some dinners) all week! You’re a budget friendly & great tasting recipe extraordinaire! 🤩
Yes it is a huge money saver making your own sauce!!! The trail and error is worth it! And yes it’s a painting for Jesus my uncle painted it years ago!
Miranda you are a lovely lady. I enjoyed watching your 'history' video, plus recipes, explaining how you got to where you are with food today. I love all the recipe ideas. I am on a budget too so this is truly helpful. Thank you for being you 😁 xxx
I’m so glad this is helpful for you! I continue to share these in hopes someone can find ideas and help with what we are currently doing for our groceries and meals!
I applaud your efforts to stick to what you believe is the healthiest diet and teach others how to do it, particularly, on the budget. I have a question though. When was the last time you did the complete blood work to check if you had adequate levels of all vitamins, especially, fat-soluble ones? Also, just a comment regarding air frying. It does make the food it a little healthier compared to that cooked with conventional frying methods, however, it still changes the nutritional content of the food substantially. And not for the better. That’s just a proven fact.
It’s 2021 and I hope by now everyone understands that any cooking of food lowers and changes the nutritional value! Microwaving, boiling, sautéing etc etc but I’m not interested in eating a fully raw diet I’m just going what I like and sharing that for others who might also like the way I eat and might be looking for ideas! As for blood work, it’s nothing something I feel the need to talk about publicly often but over 4 years ago when we were trying to get pregnant I had blood work done and have been getting it done every 6 months since and it’s the best it’s ever been over the last year! Over 4 years ago at my first appointment my doctor recommended a plant based diet and it took me this long to get on board with it. Just because I share what I like doesn’t mean EVERYONE has to do what I do ❤️ there’s information at everyone’s finger tips and I hope before anyone starts anything new they research and dive in!
I am not saying that you need to eat raw food. It’s actually not very healthy. What I am saying is that frying is still frying. Boiling, steaming, roasting are way healthier than frying. And yes eating more plants is always good. Not a rocket science either. Of course your blood work has changed for the better because of that - and I am very happy for you. Good luck with what you are doing and I hope this will work for you in the long run. It’s just that I personally don’t find this ways of eating the healthiest there is. And, yes, I have done my research too.
@@natasha5329 It seems that air frying (at least without oil) isn't really frying; it's just baking in a convection oven. The very outside layer gets dehydrated faster giving the food a crispy texture--great for simulating the mouth feel of things like french fries.
Channel is growing 😊 ~ thanks for being relatable. I'm in the same mindset to keep the grocery budget down, and can't justify the Whole Foods shopping trip when I can get the same thing for 1/3 of the $$. My husband calls whole foods whole paycheck 😂 ~ true dat!
Hahahaha yes Whole Foods is one of my favorite places but I’m with you I can get potatoes for 1/4 of the price anywhere else and right now I’m not willing to pay the higher price!!
I don’t - I’ve had them a few times and to be honest I like fake meats that just taste like tofu. I know that’s super unpopular but I don’t want my fake meat to resemble meat! But-- my husband LOVES THEM! And would happily eat them all the time! So just try them! You never know until you try!
I didn’t want pasta sauce I wanted a salsa. And I wanted to try making my own! Salsa is about $2.75 a jar and the ingredients I used totaled less than $1
@@flourishingmiranda like make the lentils into a lentil dal i mean im indian and vegan and its super easy but my non indian friends do indian to be vegetarian is all it adds flavour right to lentils with rice etc
Oh really?! I’ll have to find them! Do you find consuming ones with oil to really mess up things? Or is it small enough that you are able to maintain, etc? Thanks!!
Definitely try the Chocolate Covered Katie orange sauce I shared with you earlier! I know it contains oil, but it's only a teaspoon and makes the sauce taste like it came from a restaurant. chocolatecoveredkatie.com/healthy-makeover-panda-express-chinese-food/
I’m gonna have to shop for ingredients 😂😂 this is still on my to make list but by now I need to start MAKING the items on that list!! It’s very long! My husband loves orange sauce and I think I shall try this this weekend!
Have you looked into a more balanced vegan diet? I see a lot vegans on yt having health problems long term with high carb low fat.. No hate! I like your videos. :)
I started as more of a “balanced” vegan per say but have really loved this for right now since I run so much and have many endurance friends who have been high carb for years! I know personally there will be a day that I might change my mind and my diet might shift again but for now I love this!
Some have had issues with having their fats too low but you don’t do zero fats you so eat nuts and avocado (I don’t eat them due to allergies) I think overall the main thing is to really listen to our bodies. If you body isn’t thriving you need to change what you’re doing! Everyone is different and thrives on different foods!
I just think it's amazing how dedicated you are to reducing your food budget and save money. A lot of people don't realize how much money you can save, and you are eating healthy. It's been really motivating to see!

@@natasha5329 It seems that air frying (at least without oil) isn't really frying; it's just baking in a convection oven. The very outside layer gets dehydrated faster giving the food a crispy texture--great for simulating the mouth feel of things like french fries.
@@SustainedFuture Thank you, I was not aware of that
Channel is growing 😊 ~ thanks for being relatable.
Beyond meat burgers are on sale in my area. Do you or your hubby like that brand?
I don’t - I’ve had them a few times and to be honest I like fake meats that just taste like tofu. I know that’s super unpopular but I don’t want my fake meat to resemble meat! But-- my husband LOVES THEM! And would happily eat them all the time! So just try them! You never know until you try!
woudn't it be cheaper to buy a pasta sauce instaed of the ingredients you used ?
I didn’t want pasta sauce I wanted a salsa. And I wanted to try making my own! Salsa is about $2.75 a jar and the ingredients I used totaled less than $1
How do I make lentils on the stove?
Rinse your lentils, bring them to a boil than let them simmer for about 45 minutes like you would rice until they're soft!
You should make these indian style its the way to go for a vegan
I don’t know what that means ☺️☺️
@@flourishingmiranda like make the lentils into a lentil dal i mean im indian and vegan and its super easy but my non indian friends do indian to be vegetarian is all it adds flavour right to lentils with rice etc
Ohhhh yum that sounds amazing!!!
I choose to not add oil either. Have you found any oil free tortillas? Or just choose to let that go? Thanks!!
La Tortilla Factory is oil free!
Oh really?! I’ll have to find them!
Do you find consuming ones with oil to really mess up things? Or is it small enough that you are able to maintain, etc? Thanks!!
@@redmaren72 if it’s just a little I don’t even notice!❤️
If I don't have an instant pot can I cook the bana on the stove?
Yes you can!
@@flourishingmiranda I had to through out my inner pot of my instant pot. I just ordered a new one from Amazon so I should be good now.
Come help me budget okay love you byeee😛❤️✌️
Hahahaha okay I will! I always got your back!
$15 dollar meals will balance out the $15 White Claws...
YAAAAAS!! Win win 😘🤩😉
❤️
Definitely try the Chocolate Covered Katie orange sauce I shared with you earlier! I know it contains oil, but it's only a teaspoon and makes the sauce taste like it came from a restaurant. chocolatecoveredkatie.com/healthy-makeover-panda-express-chinese-food/
I’m gonna have to shop for ingredients 😂😂 this is still on my to make list but by now I need to start MAKING the items on that list!! It’s very long! My husband loves orange sauce and I think I shall try this this weekend!
@@flourishingmiranda If your husband loves orange sauce over cauliflower, I think he'll LOVE that recipe!
@🥺 what are the heath problems you have noticed with high carb low fat long term? Resource possibly?
Some have had issues with having their fats too low but you don’t do zero fats you so eat nuts and avocado (I don’t eat them due to allergies)
I think overall the main thing is to really listen to our bodies. If you body isn’t thriving you need to change what you’re doing! Everyone is different and thrives on different foods!
@@flourishingmiranda thanks for the reply. Just found your channel and am enjoying it.🌱
@@flourishingmiranda Great! I agree, we should listen to our bodies more.
