Actually, "Tấm " is not the broken rices,it is the Germs (embryo) of the rices. People has miss-used the term "Tấm " for so long, now, city people don't even know that .

No they don't really use knives here in Vietnam
You can ask them to cut the meat for you. They'll be willing to do so. Normally they'll cut the cutlet for you even you don't ask. 😊
Using hand is better than using knife if u want to enjoy the dish in right way. It will be more dilicious.
