Chewy Ube Butter Mochi | Ube Mochi Brownies | Hawaiian Dessert

  • Ube butter mochi, or ube mochi brownie, is a twist off the Hawaiian butter mochi dessert. Meanwhile ube is a purple yam from the Philippines. This has the texture of chewy mochi, combined with the flavor of ube, butter, and coconut. It’s a tasty dessert that you’ll love.
    Recipe inspired by Jeanelleats

    Ingredients:
    5 eggs
    ½ cup melted butter (115g)
    1 can coconut milk (400ml)
    1 tbsp ube extract (amzn.to/3slB2fQ)
    1-2 pinch salt
    2 cup white sugar (200g)
    1lb glutinous rice flour (must be glutinous) (amzn.to/2Q9Xvzb)
    Optional: coconut flakes
    1tbsp baking powder
    Instructions:
    1) Mix egg, melted butter, coconut milk, ube extract
    2) Add glutinous rice flour, salt, sugar, baking powder
    3) Stir until smooth and all clumps are gone
    4) Pour in a baking tray lined with parchment paper, or butter the baking tray (9x9 pan in video)
    5) Bake at 375F for 1 hour
    6) Sprinkle coconut flakes on top and enjoy.

    Made this today and they are delicious! I added a tbsp of ube powder for more flavor and grated cheese for toppings. Thank you for sharing this recipe

    Thanks for the recipe. I added 1 cup of sugar instead of 2 since I'm not a huge sweet tooth and substituted the ube for pandan extract. Turned out amazing. Might add more pandan extract next time for a stronger flavour.

    So I made this according to recipe and I didn't really taste the ube! I was so shocked bc the smell was so powerful and very pigmented. But it did taste like a delicious mochi dessert. Wondering if it's because I used a different brand of Ube extract..maybe I'll add more in the next batch I make!

      Hey! I think it might have to do with the brand of extract as well. I thought the ube flavor really came though for the one I used

    This is quite relaxing… I knew ube due to Lars 😆 And I tried looking for the real ube in every Asian store in my area and the search is like hunting a legendary Pokemon.

    Hey thanks for the recipe I’m making it right now.
    1 cup of sugar is 200 grams though. Not sure how you got 2 cups/200 grams
    I just used a 1 cup dry measuring cup, and then weighed it and it’s 200grams of sugar.

      I wouldn't mix it into the dough. Maybe add it clumps right before baking. Amount up to you

    I want to make these but I have real ube instead of extract, should I make an extract with it or can I use the real deal? Genuinely asking, I enjoy baking but baking can be very fickle and I don't want to ruin a perfectly good recipe :)

      I ended up making it with the grated ube, its not as dark and the texture is a little different but overall still good, it just messed with the portions a tad

    I made this and it was so good! I brought it to a party and everyone liked it. And it was easy to make. This will be a recipe I'll make often. I didn't have ube flavoring so I just used coconut and strawberry flavoring and it worked. But I'll have to find ube flavoring sometime and try it

    Does the ube extract give enough flavor? I've been dying to make ube butter mochi but majority of the recipes use extract and people say ube extract doesn't give much flavor.

      I thought the flavor was pretty strong with the extract that I used. But you might get different results with other extracts

      Hey I wouldn't mix it into the batter but I think adding it to the batter before baking would be fine. And I would just add enough to cover the surface area so the amount depends on what size pan you are using

    for those looking for an authentic ube to be used as an ingredient. you can look for it at southeast asian countries where it's native particularly the philippines. funfact, ube is a filipino term for that plant.

    Turned out so good. I did one cup of sugar and added extra Ube extract. It was perfect not too sweet. I also put milk cause my batter came out really thick but it didn't affect the recipe at all.
