I always flatten my stones before start to using them for first time just to ensure they are truly flat. In many occasions brand new stones are pretty close to dead flat but depending of the quality of the stone and method of making some times we can experience a stone with surface with have more bonding agent than abrasive grains - so re-cutting the surface gives us flatness and fresh abrasives to work with.
