Awesome looking recipe! And you have a very useful looking knife. However, that's still a TON of finely chopping of veggies. Have you ever considered using a good food processor, even a non-electric? It could save you a lot of prep time with the carrots and celery and onion and garlic.

They then have to go to great lengths to preserve the creamy texture by working in all kinds of additives. In the case of low-fat or skim dairy, powdered milk is added, which contains oxidized cholesterol, that is much worse for your arteries than ordinary cholesterol or full-fat dairy.
