If you grow your own jalapeños, you will find out why they have a reputation of being hot. When they are smooth, you get a little heat and a lot of flavor. When they are old and wrinkly the heat probably increases 4 fold or so. Stresses like lack of water can influence the heat too. But the high end of the jalapeño heat range approaches the low end of the Serrano paper heat range. Grandpa told us to pick them when they are young and beautiful if you want a show pepper for eating raw in the recipe. Pick them when they look like an angry old man when you want to stew or make chili soup.

Sams so right I made my own pan pizza a few weeks ago and just didn’t have the capacity to make my own dough bought my dough at Publix and it was fantastic. I’m no pizza critic but if your a regular joe or just dipping your toes into cooking good food you probably won’t care at all and it’ll still be satisfying to know you made your own pizza.
I don’t mind the gardening in the background. I’m surrounded by neighbors with huge landscaping so I can hear it all around me while I watch Sam and the Boys. Man that pizza looks so good! I’ve never dove the dough myself but now I want to try.

Sam, way back when, I worked for Pizza Hut. They used to use a topping called "Fairy Dust" on their pizzas before they went into the oven. As a simple mix of herbs, spices, possibly MSG, it really defined the Pizza Hut flavor. Can you do some research and find out what "fairy dust" was?
From a fourm: "I worked for Pizza Hut in the late 60's. Here's what I remember.. One other thing we used was what we called fairy dust. It was a shaker fillled with equal parts oregano and Parmesan cheese sprinkled on top of the pizza prior to cooking. The oregano gave it a little kick and the Parmesan gave it a little crunch."

Do grilled brisket tacos (the best) 1.) Slice raw brisket thin 2.) Season with season all or lawrys 3.) Grill on high heat (watch for flare up's because of high fat content) 4.) Using a clever chop meat (because of toughness) 5.) Serve on grilled corn tortilla (chopped onion, cilantro, lime, and salsa opcional) Creamy green salsa (most people think it has avocado but its a lie) 1.) Grill 5 jalapenos 2 serranos 2 cloves of garlic and a 1/4 onion 2.) Once charred blend everything together 3.) Crucial step slowly drizzle canola oil while blending to emulsify (if oil seperates stop and remove excess oil and reblend) 4.) Add salt to taste (even though it has a lot of peppers it is not a very spicy salsa. Really creamy in texture)
a trick i learned for cooking pizza in cast iron - after you put the dough in the pan and sauce on the dough, put the pan on the stove and turn it up to med-high while finishing up the toppings and cheese. the crust underneath will be perfectly crispy

Next time you make pizza in a pan, dust the pan with grated parmesan. The juices from the sausage (if you don't cook sausage in it then coat the pan liberally in butter) and the heat from the pan make the parmesan carmelize and stick to the crust. It takes your crust to a whole new level.
Great Recipe. I love any reason to use the cast iron pan. Plus. I learned what the name of the thing that you use to mix up dough with your KitchenAid Mixer. You know that Kneading attachment or maybe........The Dough Hook. lol

Been making Pizza 30 years yeast up. You nail it, but one thing I do different, I put the sausage on raw. It gets done, but not like twice baked sausage jerky.

I didn't use your recipe or dough this time. I had half the dough from my last pizza adventure in the freezer and I was wondering if I could try a different coking technique than using a pizza stone. Then I remembered this video and decided to use my trusty STGC cast iron skillet and the temperatures and timing you used. It worked wonderfully well. I find getting the pizza onto the stone can be tricky. Not so with this technique.
To make it simple I would've just combined all the seasonings in the same little cup! Also saves dishes to wash!!! And GORDON RAMSEY AIN'T GOT S#*T ON SAM THE COOKING GUY!!!!

"Fennel and Italian sausage are like a marriage made in Heaven" Yes Sam....that's because Fennel is basically what makes it Italian Sausage. Or Anise is sometimes used too. All Italian Sausage is, typically, is ground pork (I've always used Pork Butt), fennel or Anise or both, garlic, salt and pepper. I like to add thyme, basil, and oregano too. Even better is to marinate the pork in those seasonings, overnight. Some people will add dry red wine too. Just wanted to chime in.

"Fennel and Italian sausage are like a marriage made in Heaven" Yes Sam....that's because Fennel is basically what makes it Italian Sausage. Or Anise is sometimes used too. All Italian Sausage is, typically, is ground pork (I've always used Pork Butt), fennel or Anise or both, garlic, salt and pepper. I like to add thyme, basil, and oregano too. Even better is to marinate the pork in those seasonings, overnight. Some people will add dry red wine too. Just wanted to chime in.
