Yo Sam! Thank you so much for this recipe as it came in clutch for me. This past weekend I got tasked to cook over 50 chicken breasts for an 80 person wedding. I needed something easy and something a wide range of people would like. I used this recipe and it was a huge hit. My in-laws were cooking tri-tip and had low expectations for the chicken. Turns out, we had no leftovers of the chicken and a huge hotel pan of tri-tip left. Thanks again!!!

And I have to say it was the greatest chicken I have ever cooked. I have been massacring grilled chicken for years. But your flattening technique changed everything. You rock. Keep up the awesome material.
Tried this with a twist. Used fresh basil instead of parsley then added marinara and fresh mozzarella and broiled to melt the cheese. Delicious! Whole family loved it!
Just made this for my family. Used Kerrygold Irish butter. Also made mashed potatoes based off the one he made for the Sheppard's pie video. Huuuuuge hit. My dad practically licked the plate! 10/10 highly recommend.

Actually the grill marks are on a 45 degree angle if you take the long axis of the chicken breast I know what you're saying about him turning it 90 degrees
The initial set of grill marks might be on a 45° angle to the grain of the meat in the chicken breast, but that is completely coincidental. He calls “doing a 45” when he turns the meat to give it its second set of grill marks. Which is 90°, not 45.
I think when he says "... and we turn on 'a' 45", he's more referring to the (2) 45 degree angles he has when he's facing forward. So he starts the chicken on "one" of the 45 degree angles, then puts it on the other 45 degree angle... but yeah he might be stoned... 🤣 and either way we

I love the parent/child dynamic you all have going on. Sam, it’s not only your job to pick on your kids, it’s their job to pay it back. They’ll get theirs when they have kids. But more importantly, I learned an important grilling lesson today. I’ve been doing it all wrong! Definitely going to cook the pretty side down first from now on. I did know about the European butter though. It’s churned longer, the fat content is higher (hence more yellow) and it’s often made from cultured cream which gives it the tanginess that’s different from American butter. One of the local dairy products companies in my area makes a European style butter that I buy when it’s on sale.

Made it. Meal was ok. I went back and made it again- this time adding a lot more garlic and also NOT slicing the chicken at the end. All that did was make it taste dry. If you leave the chicken cut to bun size pieces. The sandwiches are way more moist and better. Great recipe StCG!
I made this chicken breast this evening. My family loved it. I am thoroughly impressed in the amount of moisture held in the chicken. Yes, the oil and butter helped, but there was moisture inside as well. My grill was probably too cool (not enough charcoal) and it was on a little too long even. Thank you for sharing this with us. 10/10 will cook again.
