In my Mexican style tortillas, I find that if the water ratio is high enough so that the dough doesn't crack when pressed, it ends up being unusable. (It tears when trying to remove from the plastic after pressing, and it sticks to the pan when frying). However, when I make fairly dry dough that cracks considerably when pressed, it makes perfect tortillas every time.
I think every batch can be a bit different too. I’ve been using about four types of masa (from differing varieties of corn) and I just feel for it. If it can’t come off the plastic pretty easily, I add a bit more masa; sometimes I just let it sit open for a bit of the water to evaporate.
Håfa Adai, Carol! I found it online though don't quite remember which site. I probably Googled something like "Buy metate." There's several options out there. This one was about $200 with shipping....I think. It's been at least 5 years.
