      Wagyu also comes with different “brands,” as some brands are known to be more delicious than the others. For example, the Wagyu “big three” are Kobe Beef, Matsusaka Beef, and Omi/Yonezawa/Maesawa Beef. You might find a place that serves “Kobe Beef” for a low price, but now you can guess the reason. Even within Kobe Beef, the Wagyu ranking system is used. B4 Kobe Beef is served in many restaurants to save the cost.

    There are several types of Wagyu including Kobe.
    In recent years, the best Wagyu in Japan is beef from Tottori and Miyazaki.

    Im in tokyo right now and just had both kobe and waygu steak at a fancy steak restaurant. They were both absolutely amazing. The waygu tasted like butter and was mouth watering. The kovw was sooo soft and melted in my mouth. The kobe had more of a beef taste. Both were ammmmmazing, but also crazy expensive lol

    Very interesting. I was in Japan many years ago while in the Navy. One evening I stopped into a restaurant had ordered Kobe beef for dinner. I was by myself. I couldn't find anyone else that wanted to go eat. They wanted to drink. I completely enjoyed this beef so tender I could cut it with the side of my fork. After 50+ years I can still remember how fantastic it tasted. Now, I ordered "Kobe" and now I learn about Wagyu. Might I have had Wagyu or was it Kobe? I can barely remember it was pretty well marbled but I can't tell how much after all this time. I'd like to try both again. Hmmmm, a trip to Japan in the future?

      Because he seems not to understand that wagyu is an actual breed of cattle and that all Kobe beef is wagyu it's just not all wagyu is Kobe beef. Plus Kobe beef is not a grading system it's just where it's comes from so any wagyu raised outside of the Kobe prefecture would not be called Kobe it would just be wagyu even though it's the exact same thing.

    • @tobyihli9470
      @tobyihli9470 4 ปีที่แล้ว

      Freelander If it is wagu cows, than it’s the same. Wagu is a breed of cow is all, just like Angus. Only now, Angus cows merely yield better shape and amounts of the choice cuts, and not so much a trademark flavor, as it did in the beginning. High commercial production has tended to wash out a lot of the flavor distinction.. For many many years, just as with silk worms from China, a US farmer couldn’t purchase live Wagu cattle. I believe that has changed and some of the Wagu breed of cattle is American owned. I’ll say this. Wagu is such a different animal, as long as it’s purebred Wagu stock that is bred, it will always be a totally different product than American breeds like Angus. It’s taken centuries of manipulation of the cattle to even cause it to store the fat within the muscle itself to the extent of Wagu. Might even have been a mutation of the genes many centuries ago that brought about such marbling. It’s almost as if the fat is marbled with muscle fibers.

    • @freelander4058
      @freelander4058 4 ปีที่แล้ว

      Toby Ihli I do understand all that . I too watched a few documentaries on the beef . But I have seen the animals on those ranches . With the glued meat being passed in very expensive steak restaurants and the less expensive fish being passed off as expensive fish . The cows Wagu steak comes from are treated like royalty as I understand it . And the ones that run loose on those ranches need something.
      That’s all my comment was about . Buyer beware is all

    Japanese version of select, choice, prime - and I suppose - prime PLUS (not that there is any such thing as 'prime plus'). I'll never try Kobe. Why would I? I'm going to pay a premium, just because the beef comes from the Kobe region? Screw that! As far as Waygu goes: US prime beef is LIKELY every bit as good as Waygu - we'll see! I intend to try Waygu. From the OVERWHELMING videos and reviews I've seen, there is no reason on Earth to pay the premium for Kobe, or Waygu beef! Good beef, is good beef! All this hype of Kobe vs. Waygu, versus other grades of (American raised) beef, is simply that: HYPE! I guarantee you : if a blind taste test of Kobe, Waygu, and (American) prime were done, the results would show that there is little difference!

    One interesting trivia about Japanese cuisine is that it was completely vegan some 200 yrs ago. An imperial decree during famine allowed Buddhists to eat meat. I don't think there is a single dish in Japan now which is vegan now. Also, looks like India is the only country where some cultures still follow the tradition of being pure vegetarian.
