Shima Steak (西洋料理 島) is a well, one of the must-eat wagyu beef steak restaurants in Tokyo, and it was an honor to be able to have a chance to eat there for lunch one day on this Tokyo food tour. You could either order the sirloin or the fillet, and I decided to go for the sirloin, because it’s known to be a little fatter and juicier.
The chef at Shima Steak (西洋料理 島) has developed his own unique grill for steak, where it’s a wood fire oven, but it grills and bakes at the same time. He cuts hugely thick slices of wagyu beef steak and then skewers them to cook in the oven grill.
It was one of the most tender, juicy, and insanely flavorful steaks I’ve ever had. And not only the food, but I really enjoyed the friendliness of the restaurant, the chef and his wife, and how it really felt like you were going over to your relatives or grandparents house to eat a top of the line Japanese beef wagyu steak.

For dessert, one of the things you can’t miss when you eat at Shima Steak is their world famous steak sandwich. You have to watch the full video to see how it’s made, but all I can say is that it will amaze you how much beef they stack into the sandwich and how they pack it into a to go box bento style. It’s mind blowing, and insanely delicious!

While I imagine the food was beyond spectacular, the level of hospitality they showed was very impressive. The chef walking out with the customers and wishing them well on their journey is so impressive. Much like how you would treat a dinner guest at your home. Awesome!

Looks like a Shun mini ultimate utility knife (with the scalloped edge) a long discontinued steak knife.
ye, that knife is made with VG-10 steel at around 62 hrc. Can get pretty damn sharp if you know how to use a sharpening stone!

@@gigilo5820 in Japan they have a certificate for each individual cow that was bred for its meat. Even shows you it's lineage. So it's pretty well controlled. They even have the cow's nose print on the certificate
and thats how atleast! it is supposed to be...nowadays nobody really cares about where his/her meat came from. U just buy it wrapped in the supermarket, but you still eat an animal that was alive. If we have to kill the animal by ourselfs i garantee that most people wouldnt eat the meat anymore
@@TheRonimor totally agree.... and, they give the meat of the cow better treatment in its preparation. As such, the American plate of steak looks far messy than that... too much condiments... uneven portions... it's too greasy and oily.... here, the serving itself is very clean... in the end, no grease or extra sauce is left on the plate... the portion of meat is even.... so, overall, it's very graceful and elegant even in serving the meat.... the respect towards the animal is offered even in the kitchen. That's how it should be....
They weigh the meat. Cut into portions and prepare the portion individually... not too much of meat.... in the end, zero waste is left on the plate.... they don't end up with serving heaping portions of steak on one serving and wasting lot of meat in the end....
