How to cook PROPER Take away plain chow mein (noodles)

  • Take away plain chow mein (noodles)
    I sell most of my main dishes with a portion of chips or boiled rice as a complete meal. For a little extra; customers can upgrade their boiled rice or chips to egg fried rice or noodles. The noodles are titled as plain chow mein, they are cooked with onions, bean sprouts, leek and noodles. It’s a popular choice in the shop.
    Plain chow mein is pretty easy to cook, I used Lucky boat brand number 2 size noodles. For best result, ensure you wok is hot and dry and the noodles are free from moisture.
    Ingredients;
    1 bowl of fine noodles (no.2 size)
    1 handful of bean sprouts
    Half small onion slice
    1 spring onion/ small handful sliced leek
    Condiments;
    Quarter teaspoon salt
    Quarter teaspoon MSG
    1 tablespoon dark soy sauce
    Few dashes sesame oil
    1 teaspoon cooking wine

      Regards your question, it depends how strong the shrimp flavour you like. If you have shrimp pasts it sounds tasty. Next time I go shopping I'll see if I can get my hand on shrimp paste and do a video for you.

      oh, about the oil, I just rinse the wok so it's fully coated in oil to stop the noodle sticking.

    My noodles always stick to my wok. Any tips? I'm using a seasoned light-weight cast iron wok at home (not heavy one).

      maybe your noodle is too soft.

      @@KhoanVong Maybe. I will experiment a bit, and maybe try and cook them a min or two less than the package instruction. Maybe also dry them better before stir frying.

    How do you prepare the noodles? would I be able to use spaghetti and boil it and just add it to the pan?

      Chinese Egg noodles, Lucky Boat #2 best. Soak noodle 'nest' in hot water for 5 minutes then drain under cold water. Allow to dry.

      If you can't find Shaoxing rice wine, you can use cooking sherry.

    Thanks for this. Can I ask do use the egg noodles or just the fine noodles? The number 2 lucky boat aren’t egg noddles I don’t think. Correct me I’m I am wrong?

      Iucky boat fine noodles are not egg noodles. you can use egg noodles for this recipe if you have it at home.

      At home I use shao xing, that is the most common and popular cooking wine. I use a commercial brand at the shop.

    Hi Khoan - Lucky Boat is difficult to get unless buying a big box of it. What’s the best brand from a Chinese supermarket - there seems to be hundreds! I’ve used Lion and they seem ok.

      Lion brand is fine if you can get them in small packets. I'll have a browse next time I go shopping to see any good brand that come in smaller packets.

      that is a side dish, it's 60p to upgrade from chips or boiled rice.

      I use lucky boat no.2 noodles. Pearl bridge soy sauce and ajimoto msg.
