When you crumb anything, use one hand for the eggwash and the other for the flour and breadcrumbs. then you don't have a mess on your hands and messy crumbs. Just a thought.

Another epic vid, cheers bro! How come you take snapper over kings? You reckon snapper is better eating? Are those ziplock bags re-useable? I use the type that come in a roll and you seal them with a machine, but they make heaps of plastic rubbish
Hey mate I will shoot kings for smoking and sashimi but snapper for most of the generic meals. It's far more forgiving in the fridge, have had it sweet for 5-6 days uncovered and even after fresh water wash staying mint. Kingfish weeps and no matter how much you paper towel it or dry it after several days it has a strong pelagic taste and also the cooked meat has a real fishy flavor in meals that are re heated on a second night. It's just my preference after basically converting to a daily fish diet. Kingfish have their place in my diet but generally are more of a scenic fish as if I kept shooting them over and over again the freezer would fill up so quickly I wouldn't even need to spear anymore lol. Yes the zip vac packs do a few uses, as opposed to the seal and throw away ones.

I thought a high diet of open ocean fish is high in mercury content? Especially among fish that consume each other as main diet. Also I thought that all the fish eat the others anyway so it just goes up the line to the biggest predators.
You are right about open ocean fish and big predators. Snapper being a non oceanic reef fish and also far from being among the bigger predators still has levels of heavy metals but it is not one of the concern species here. Without that in my diet the dish would've been just broccoli rice and mushroom because i'm not buying meat I haven't killed myself at this point.
