The kingfish probably came out so well smoked was because it had a high oil content. Smoking it was most likely the best choice. Great filming, thanks to everyone for sharing the experience.
lasker31 cheers mate, yep i smoke a lot of kingies but haven’t had that nice stringy connective tissue before. I think the age of the fish helped. You’re right about smoking I only generally sashimi and smoke them.
