I've made these wing 3 times now. They are hands down the best wings I've ever had. Your technique, temperatures, and sauce are spot on. Thanks for this recipe.
@@FOGOcharcoal Besides wings, I often use it for thin cut steaks, such as outside skirt steaks. Though also great for searing any steak, afterburner style, such as some do over charcoal chimneys. At times, I use it for strips of Wagyu A5 ribeye, eating by the grill, Yakiniku style. Just careful not to burn your lips with the scorching hot fat on the Wagyu LOL. Which reminds me what I should be cooking today. Happy Sunday!
I put myself through college and law school as a short order cook in bars, always made wings, and when someone complained that my sauce was not hot enough, I always added in some powdered Irish mustard...Kicks up the heat and adds another level of flavors
Yes I do! It stays in during the entire cook. Yes, the stainless cap is great in rainy or snowy areas and not only that, it looks cool too! Both are available on our website.
I made the sauce with my last batch…a little tame for my taste. I’m adding a little extra cayenne today to see if that kicks it up a bit. Great content!
When I do it on the Weber kettle I put a chunk of wood over the vortex flame. Also seasoning wise I go 1:1 ratio of corn starch and rub of choice. Be warned it does make the kitchen messy. Lol thanks Ron and Fogo Charcoal.
Thanks John! Hey, when we are done filming these videos, my kitchen looks as though a bomb went off in it followed by a tornado anyways. what difference would a little corn starch make? LOL
I can't believe that I tried something before The Captain. I am not sure what it is about the Vortex and chicken wings when it comes to indirect but they were better than any I've done with the ConvEGGtor. I have also used it to reverse sear a steak after I did wings. Works great for both.
Tony, the student has become the master. I have seen you use it and figured that if you were loving it, it had to be good. I love the idea of the reverse seared steak with it also. I smell a new video coming up!
@@FOGOcharcoal you’re too kind. I did the steak a week after the wing’s as an experiment because it was already set up with the Vortex in place. Someone on the boards suggested using this in conjunction with the rotisserie but the one I have is for the XL and I there’d be issues with clearance haven’t both on there.
So many different ways to do wings. I normally use the rotisserie with a wing basket. I was curious as I have my Big Green Eggs in a screen porch, do the palm trees around there, help against the smoke inside the porch area? I’ve been debating about a vent
We are working on getting a wing basket in stock and cannot wait to make a video using it. I have heard great things! I have a pedestal fan that I use to blow the smoke outside. The palm trees actually block the smoke and keep it inside if anything. I have 4 Eggs that I use on that porch so I would need one huge vent!
I like both flats and drums. But definitely team Blue Cheese !!!As a safety note, please make sure that your coals are cold before dumping your ash and coals into a container. I can't tell you the number of times that I (retired Fire Captain) responded to fires because someone put hot coals/ashes into a garbage can !!
You know what Jim, you are 100% correct. I should have added that into the video. I have in the past but forgot on this one. Thanks for your service!!!
Do you think the effect of the Vortex is specific to a round grill like the BGE or Weber kettle, or do you think the Vortex would work similarly in a rectangular grill? Maybe something about the circular rotation of the heated air? Maybe I'll pick up a Vortex and try it out on my rectangular Lone Star Charcoal grill. Might as well--I buy every thing else you guys promote. Still need to break in my Trompo King!
You know what, I am not 100% sure. I know people use it in a Primo and they are oval. We appreciate the patronage and loyalty. Yes! Put that Trompo to work. We want to see what you create with it
I controlled the temp just as I would with any other cook. If you go on our website, click on the Vortex and there is a chart that will let you know which size you need for your specific grill. Yes, it will work great with a large Egg as well.
We've had terrible luck with the duck fat spray. It stops spraying before it's empty and with the price of it, that's a huge problem. Any suggestions to fix this issue?
Yes! I have actually had the same problem and there is an easy fix. Simply take the top off and put it in a pot of hot water for 30 seconds or so. It works like a charm. they are working on fixing this problem. Sorry you've had an issue. email me a mailing address and I'll send out some stickers if you'd like.
@@FOGOcharcoal Guess that’s better than being half wrong. 😂😂 I’m on the website now thinking of ordering the small vortex for my BGE. Will have to give it a try. I love cooking wings all different ways and would love to give this method a shot!
With the Capt. and Fogo charcoal you can't go wrongi cant wait to add the vortex to my arsenal of big green egg tools. Team blue cheese all day long Capt.

No lie, these were amazing! I was skeptical at first but I am totally sold on the Vortex!
We hope everyone will make these and tag us in their social media posts!
Love it man!! I can’t wait for Super Bowl!
Me neither! The good news is that both of our teams are up and coming and could really have a shot in the not too distant future! #BearDown #FinsUp

Great Video Ron!!!
Glad you liked it Vance
Been using a Vortex for years now for my wings on the BGE and love it. Glad your sharing because folks will love it Ron.
I just cannot believe that I was so far behind the times on this one. It really works incredibly well!
Can’t wait to make this sauce! Thanks dude!
You're welcome, let me know what you think!
Great cook. I use the vortex, this is a great use for it.
Thanks my man! I have just started but man oh man am I sold! We have some more vides coming out using it too. What do you like to use it for?

I just ordered the vortex, can’t wait to test.
Awesome, let me know how much you love it!
I’m convinced, they look delicious! 🔥
I just may have to make them again for football today!
Flats / Classic Buffalo / Bleu Cheese for me! Love the vortex piece, I always did the 2 side trays on my Weber Kettle. This is a game changer!
You are the best. Thanks for the video idea yesterday too. The Vortex was actually originally designed for a kettle
@@FOGOcharcoal 🙏❤️ Always sir!!!
Finding this one year later and its an awesome idea. What was the vent situation like to get the vortex set up and holding at 375?
Bottom vent about 1/4 - 1/2 wat open, top vent open. Watch your temps as it heats up.
@@FOGOcharcoal awesome. Thank you!
Silly question, I see you use blaze ball a lot, do you leave it in during your cooks? I noticed a diffent chimney cap, advantage over stock one?
