Very nice attempt. You can also make butter chicken with same sauce. Cloves are too strong in taste so try using only 2 in any Indian gravy. Also you need only 2 green cardamoms in that portion of curry. Turmeric adds nice color to the dish but if you use too much it gives bitterness to the dish. You only need to add 1/4 teaspoon of turmeric in cashew based gravies because if turmeric is more it will overpower the sweetness and creaminess of cashews.
I really appreciate your study on Indian food , the serving vessels are apt , seriously very good study , and pairing it with basmati jeera rice and naan is accurate . I wonder do u have Indian influence in friends and family since childhood , because otherwise this is very difficult ,Trust me Indian ladies also cannot get away that easily when it comes to these type of exotic cuisines. Its really difficult . With ur love for Potatoes u can try Batata vada as in Potato vada its Mumbai street food , utterly famous and eaten with Indian Paw , bread with chutney ,while sipping hot tea and watching the mumbai rains. You were just Fantastic... It really has turned out very well... You should now try the Kashmiri Dum Aloo (Potato) which is somewhat similar. It replaces the Kofta.. but ensure you get small whole potatoes..👍👍
That malai kofta looks so good!. The only thing I would change is use black cardamom instead of green cardamom. green cardamom is generally used in sweet dishes, while black is used in savory dishes.
I do put all the dry cinnamon n cloves n cardamom black cardamom n leaf in the tomato n onion berries making a paste in mixer grinder to get even more intense flavour but in that case you have to filter the gravy to get the pieces of these spices get out from the gravy else they will keep coming in your mouth so both ways we’re can do put them full in the gravy then no need to filter or seive the gravy or if putting in the grinder then need to filter the gravy you can try both ways
In India we have a Round Plastic Or Steel Masala Box with separate small portions for all different masalas.. So u can purchase such a masala box then you will not need plate for masala..

For more smoothness in gravy you can actually strain it using a strainer after blending it gives an smooth texture
