Good attempt. If u want more red color then add more kashmiri chili. It is mostly color and very less heat. Kashmiri chili is like paprika. U can use it liberally. Don't be scared to use atleast a tablespoon of kashmiri chili. Also the bhaji needs to hv higher tomato content. So u can add tomato puree/ sauce along with fresh tomatoes. U can make the consistency more runny so that the sauce flavors penetrate the pav with every dip. Try with various vegetable mixtures. Whatever are seasonal veggies use those. Onions, potatoes, tomatoes, ginger, garlic, Fenugreek, cilantro, lemon and spices are the base. Add whatever veggies u like such as eggplant, carrots, peas, beans, cabbage, cauliflower, radish. The pav bhaji masala and butter also needs to be used liberally. Keep trying to cook indian at home. Great effort and passion.
I just remembered my childhood!! I hated veggies as a child, and this was my mum's go-to dish where she would put in some more veggies like boiled cauliflower, peas, carrots etc in it...a complete pot-pourri of veggies!! The pav-bhaji masala somehow masks the veggie taste, and I simply loved it!! And anyways, nothing shouts out LOVE better than a dollop of butter on top of it, eh!! You are becoming pro in cooking Indian dishes. Great going. Some tips - 1. Cauliflower, green peas, pumpkin, cabbage are few more vegetables which are used in making bhaaji 2. Kasuri methi is Fenugreek. Fenugreek is one of the famous greens used in various forms in Indian cuisine be it making potato fenugreek dish, or fenugreek parantha's, or fritters 3. Raw red onions, lemon and if you like green chilies then all these 3 becomes condiments which go with Pav Bhaji on the side.
Kasuri methi is dried Fenugreek leaves. Please mention it. Because some other foreigners may get confused between Fenugreek (Methi) seeds and Fenugreek leaves. Same like coriander (seeds) and coriander leaves

Firstly I was drooling 😋... U shud add green peas , cauliflower to bhaji..main ingredients.. u can saute ginger garlic paste and onions first n then add all boiled veggies n lastly add masala .. And consistency shud be bit thinner..not liquidy...that luked bit dry... For red colour kasmiri chilli powder is best..if u want spicy u can add green chilli paste..it definitely enhances the taste... N chocolate barfi has no lemon..it's purely made from milk..cooked it thicker Consistency and sugar is also added..it's divided into 2 parts and Coco powder is add to the half portion to give chocolaty taste... A bit of vanilla essence..that is hw i made ... Mouthwatering 😋

Let me tell you one trick if you want that wonderful colour to pavbhaji but do not want to add artificial food colour. Just grate some beetroot ( just a little, it can change the taste of pavbhaji which we do not want). It will give incredible colour to your pavbhaji
To keep the freshness intact of the spices you use (Kasuri Methi/Chilli Powder/etc.) please transfer them to Dry Air Tight Container and/or store them in Refrigerator in Ice Chamber.

The white part is probably the milk heavy part of the cashew barfi. The top part has a lot of chocolate mixed into it to create that effect. And the lemony taste is probably elaichi or cardamon. Elaichi/cardamon cream tends to have a lemony minty flavor.
Jessica... The two main ingredients for this recipe are missing... Cauliflower and green peas... These two ingredients play very important role in Bhaji .
Mouth watering, good attempt, ginger if used should be sorted at the start to remove the raw flavour :) and then the veggies including cooked potatoes and cauliflower and peas and carrots (roots to be less so as to avoid a carroty flavour) :) raw onions to be added after the cooking is done to get the crunch of raw onion :)

The Portuguese brought this type of bread in india, Pav comes from the word pão (Bread). Bhaji was a last minute gravy made from leftover vegies.
