Coconut oil will completely change the flavour profile. Vegetable (sunflower oil) has a more neutral flavour profile and the end product will also be lighter. And if you are in love with Mustard oil then nothing else matters 😄

Amazing! The recipe that man at store suggested is Southern style probably Kerala style of cooking Pakoda. In North India, Pakora is a Vegan dish, we don't use Eggs in it and also we generally use Soybean refined oil or MustardOil(preferred as its better for health) for frying.

Thank you so much for promoting and making Indian recipes you are so lovely. One suggestion you can use refined olive oil that makes delicious Indian dishes. Coconut oil is used in South Indian cuisines like dosa, upma, uttapam, appe to name a few. So if you making north Indian dishes you can use olive oil for better taste.😊

The potatoes can also be chopped into little cubes it's all your choice.
Very good attempt and they look perfect.
Tip- rub the veggies with masalas or just salt so that they loose some juices and loose some crispness so that the batter doesn't loosen in consistency after mixing with the veggies with time and rubbing helps to shape them better, then it can be just made with one hand. Also, other fresh herbs adds another layer of flavor like spinach, methi/fenugreek leaves or arugula, the little bitterness elevates rhe flavor to another level. Also, ginger and garlic can also be added. Leftover hard stems of cauliflower or broccoli or any hard veggies can make good pakoras.

Very good first attempt to cook the Pakora’s. Kudos to you.
    • You can use potato with its skin
    • Use vegetable oil to fry pakora’s. Coconut oil is used mostly in South Indian cooking
    • You can separately make potato pakora, cabbage pakora, onion pakora, green chilli pakora, paneer pakora, cauliflower etc.
    • To make pakora crispy there are couple of ways - you may use little bit of rice flour and/or semolina
    • Go easy with green chili as you might not know the heat level of the chili. Seeds are kept with the skin
    • For a family of 3-4, a small batch of batter is sufficient
    • Carom is the English name for Aijwan seeds
    • All these spices have therapeutic / medicinal qualities
    • Best is to fist add veggies with spices and gram flour. Veggies when rubbed with the flour will ooze out their own water and moisture
    • Some recipes call for less flour. Just sprinkle veggies with flour and rub them and then fry in hot oil until crispy
    • Use one hand to put the veggie batter mixture in the oil
    • Design of pakora is in your hand. You could be innovative
    • One can enjoy pakora’s with various chutney. Most common ones are green, tamarind
    • People sprinkle chat masala on top of pakora’s for extra flavour.
    • You may make a pakora sandwich, by taking 2 bread slices and stuff it with pakora’s and grill it/cook it on both sides
    • We eat pakora’s with plain roti as well

    • @gravityend
