    I love india so much. This is land of gods. Almost 50% hindu population is pure vegetarian.. they don't believe in violence.
    There is hundrades
    of vegetarian cuisines that tells us to live with love and non violance.

      @fitAussie Annie. You definitely have to try the veggie dishes. It will definitely open your horizons to a whole new world of cuisine. I presume u must be into health n fitness. You have to try the legume dals which are high in protein. Also great way to cut down your meat intake.

    I am Indian living in Germany and have visited various Indian restaurant in Europe and believe me you will get the authentic and pure Indian taste food in India only no where else, in rest of the country there is kind of replica of Indian dishes since they make Indian food according to the foreigners, no spices no chilli more sweetness in the food even samosas are little sweet! I miss Indian food soooo much!!!

    25years back when I lived in US for few years I use to see people struggling to go vegetarian and I felt sorry for them trying to fill themselves with Salads … I thought who is going to tell them India cuisine exists … looks like finally a large number of Americans and westerners in general are realising what they had been deprived off 😂😂😂😂

    Ras Malai is generally yellow because of kesar (saffron). you should have had it before gulab jamun since gulab jamun is really sweet and the taste of other sweet dishes often goes unnoticed or tones down the sweetness of other sweets. It's considered a royal sweet. also my fav!

By the way, they can make carrot halwa without sugar also still taste amazing. In India, we have food, clothing style and language change with every 100 to 200 KM that is why it is India is called Unity in diversity. Really incredible India - biggest democracy in the World.     A winter desert. Very traditional. Gajar (Carrot) Halwa is actually grated carrot mixed with khowa and kheer ( dairy stuff) and spices. It is eaten piping hot in cold winter months.

    We roast the eggplant over gas fired burners.remove the skin and mash it . Onions , green chillies and tomatoes are stir fried using a wok and then the mash eggplant and the salt and spices are added. It could be some garam masaala but mostly the heat is due to green chillies and red chilli powder. Some people add boiled peas and stir fry the thing takes 40-45 min prepping the eggplant and then roughly the same time for the curry. We puree the tomatoes and add it in last as it is sour and stops the cooking of the dish. The chargrilled eggplant almost burnt skin of eggplant lends the roasted flavour. People who don't eat chicken or can't afford it can enjoy eggplant this way. It doesn't have cream, no butter, just oil and spices. Pungency is because cooking medium being mustard oil

    Baingan Bharta is roasted on fire, the peel is removed and it is cooked with onions and tomatoes and spices. The roasting gives it the lovely flavour. When we make bharta at home even the neighbors know it . That’s how powerful the roasting aroma is.

    In desert all are my favs.. specially rasmalai and gajar halwa..

    as an indian , i haven't explored that much
    but surprisingly india is world's largest producer of mangoes and alfonso is a type of indian Mango 😊😊

    Indians are summoned. Love that u liked it. Don't miss vanilla ice cream with Gulab Jamun it elevates to another level.
    The grated carrot sweet can also be made out of Jaggery instead of sugar. Also the taste of carrot desert when cold stored in a fridge is also very yummy different.
    I would also suggest Kulfi indian ice cream.

    Eggplant is roasted and peeled then shallow fried with fresh ginger garlic paste , chopped onions, chopped tomato adding coriander seeds, cumin seeds, coriander powder, tomato puree, red chilli salt and garam masala. Garnished it with fresh coriander leaves.

      @@hulu8022 Ladakhi and coastal people are under 10% of population of india which I have left, which is around 14 crore, 10% may seems lower number but when you see this as 14 crore, than you will realize that population of ladakh and Coastal area is not that much....

      I live in mumbai, I know many of my Muslims and Christians friends eats meat once or twice in week, because of unaffordability...
      & Population of ladakh in not even 3 lakh

    Heyy! This video is soo good. I love how open you are to trying new indian foods. But lemme give u a tip hehe. Try mixing the dishes together when eating it with rice. Its a whole other level of flavour. Most dishes are made to compliment each other as a whole meal and its really good when theyre all mixed together with the rice. Something new to try out

    Baigan Bharta....is roasted egg plant then roughly mashed.... then .onion...ginger..tomato is cut and sautéd and mixed with mashed egg plant...then put salt and red chilly powder...

    In india those foods u will find in every home everyday its a common yes paneer u can use it in weekly or 3. 4 days break but other dishes is a part of meal

    Baigan ka bharta. Indians have definitely mastered cooking of eggplant. Its a vegetable that is originally from India🙂. Finds mention in the oldest Indian texts

    Bharta is my fave thing my mom makes! And pindian (okra).
    Bharta isn’t puréed (typically), it’s very easy to just mash once it’s been cooked. And then you throw in the pan with the “thurka” (a mix of oil, spices, tomatoes, garlic, ginger), my mom usually adds peas in hers.

    Good job, some other cultures are beginning to understand and appreciate vegetarian food, it's tasty , its nutritious, it's not fatning and best of all its planet saver, you do not put any pressure on mother earth if you are vegetarian , we lndian have been eating this from 5000 years and more without any obesity.     That eggplant tastes different coz it is roasted in charcoal before preparing the curry. That’s where the smoky distinct flavour comes from.

    Baigan ka bharta, is best made in roasted eggplant, tomatos, chillies, marinated with garam masala, lemon juice, ginger, roasted cumin seed powder, black salt, peper, and then smoked with charcoal. Then tadka (fry) in mustard oil/ peanut oil with Fenugreek leaves, (onion optional) boiled pea, red dried chillies, little sugar, and garnished with coriander.

    Baingan bartha is made by first roasting raw egg plant directly on an open flame and then removing the charred skin.
    The semi cooked/roasted egg plant insides are then sauted with spices,oil ,tomato puree
    That gives the unique roasted , barbeque cum curry flavour.
