Cake in an airfryer ? Yes really .
No soggy bottom , no gloomy middle.
A perfectly cooked light , lemon sponge

Hi, I had been looking for a cake recipe that I could bake in my air fryer and found your video. I must thank you so much, yours was the first recipe that turned out perfect!! I only have a £50 air fryer , so was hoping it would work. I used a silicone loaf mould and baked it for 50 mins in my preheated air fryer at 130° and it turned out to be the BEST one I have baked so far . . . moist, lemony and delicious. This will definitely be my 'go to' recipe from now on! Thank you so very much. TFS 👍 ❤

Got my new Ninja AF451uk last night and the first thing I made today was your lemon drizzle. It was absolutely gorgeous. Only difference I made was 130 degrees for 50 mins. It was spot on. Thank you Penn 😊

Very nice. I was looking at that airfryer in the store the other day. I am not thinking about getting one, for me big stove is an airfryer as well, but I was just thinking how much you love using yours! Poking those holes helps the DRIZZLE go down! Nice!

I used this recipe in my Ninja. It was perfect. The only thing i changed was i did 25 mins on 140 and the last 5 minutes on 150. Tasted amazing, thank you

Hi Penn and Steve of course, we are new to Ninja and have just purchased a 15in1 smartlid. I couldn't wait to bake my first cake 😅 I used my fool proof good old fashioned Victoria Sponge 😢 disaster ! Straight in the bin. I did wonder at the time if I needed to scale down the measurements and maybe the cooking time. What are your thoughts on this ?

Most cakes will need to be cooked 20c lower than normal - remember your ninja is a mini fan oven .
Check after your normal cooking time with skewer inserted diagonally
If a 2lb loaf tin fits or you are using a round cake tin then double the ingredients on my lemon drizzle cake

Going to try this. Is it the same recipe you would do in the oven?
Exactly the same recipe only thing is when oven cooking I use double the quantity and cook in a 2lb tin , cook at 180c for around 35 minutes
Have followed your recipes four times and each has been a success. Many thanks. However, please let me have precise details re the baking tins. Today I bought in Dunhelms 2 1lb loaf tins however I’ll have to change as they don’t fit my Ninja dual af400uk air fryer. Regards

LEMON DRIZZLE CAKE
2 unwaxed lemons ( if you don't have unwaxed give your lemons a good scrub in warm water to remove the wax )
275g granulated sugar divided into 175g and 100g
175g butter
200g SR Flour
0.5 tspn baking powder
3 eggs
1 tspn vanilla extract
Heat oven to 180c
Grease a 2lb loaf tin and line the bottom ( or use a liner )
Zest the lemons finely
Mix 175g of the sugar ,the butter, the flour,baking powder , egg , lemon zest and vanilla extract
When it's combined pour into prepared tin, level the surface
Bake until well risen and it's a pale golden colour . This will take about 35 minutes
Take out of oven and cool in the tin for 5 minutes
Squeeze the lemons so you have about 3 tbspns of juice and mix with the remaining 100g of sugar
Set the cake on a wire rack with a plate underneath it
Make about 50 holes in the top of the cake with a skewer ( the deeper the holes the further down the cake your syrup will go )
Gradually spoon half of the syrup over the cake
After about 5 mins spoon over the rest
Serve once the sugar has crystallised.
Ring the changes and use 1 orange or 4 limes or 4 or 5 clementine in this truly scrumptious cake
Obviously I halved the recipe and reduced time for airfryer cooking

I do , I baked in the 7in 1 when I had it
I see you have setting to Bake. Is the fan start? My unit can bake with or without the fan turning on.
The fan turns at a lower speed on bake
Would you do it on a lower heat?
I'd cook at 150c as per video

Hi sorry forgot to ask but a 1lb tin won't fit in my air fryer but I've got an 8inch round tin would I use same quantities
Go for double the quantity
Could I substitute gluten free flour and would I use same quantities and would I need zanthian gum. Love lemon drizzle but expensive in gluten free
No need for xanthum gum just swap flour
